As someone who worked for 6 years in the culinary industry, watching this show, gave me like PTSD vibes. The stress is real, the fire, the rush, the shouts, all of those things that makes a normal people go crazy. But in this ambient, nobody is normal. People with alcohol abuse or drug abuse, lots of cigarettes, ive met them all, bit thats the point, these people are insanity good at their job. Chefs and waiters all working in sync, to make the best night for the guests.
I'm currently on season 2 of this show, and i cant count the amount of times these episodes have left me speechless, its a mastercraft in portraying the stress and anxiety of ANY struggling artist, as well as being so uncomfortably real with its drama. I very much hope you all enjoy the next batch of episodes.

Having friends who work in culinary (and an ex who was in it), the Escoffier Cookbook by Auguste Escoffier is the defining factor for any professional chef within a brigade. It's got all the Mother Sauces, the terminology, and the philosophy of having a functional brigade. Escoffier was the godfather of the brigade-style kitchen hierarchy, and his teachings made it to people like Marco Pierre White, who then passed his knowledge on to Gordon Ramsay. It is the ultimate puzzle piece to starting a journey in the culinary field, and I highly recommend any home cook or chef have a copy on hand. What I'm _not_ going to do is shill stock pots and stock cubes to you, because as Marco once said, "that is _your_ choice."
As much as an asshole Carmy was in episode 7 (as much as i love this show and every character a lot of them are assholes quite often) but it still bugs me a lot how Sydney fucked up the orders sending everything in chaos, STABBED richie because she's waving her knife around and Marcus was working on fucking DONUTS during a crisis? for those 2 to not take any responsibility is just crazy
Do you realize how much work was put on her that day? It's normal to make a mistake when you're under that much pressure over time. She asked Carmy repeatedly to go over the new system because things were off but was ignored by both Carmy and Richie. Then he blew a fuse when she made a mistake but not for the mistake he was supposedly angry about but the risotto incident. Also she stabbed Richie BECAUSE HE WALKED BACKWARDS INTO HER KNIFE!!!! I'm tired of pointing this out to people. She wasn't waving her knife around when it happened, she was just going about her business.

If you're "going about your business" you leave the knife or hold the knife properly. I never said Richie wasn't at fault as well but holding a knife like that in a busy kitchen is crazy dumb.

Ok. Unpopular opinion: I do not like Sydney. She is awesome, and capable, and reliable most of the time. But as soon things stop going her way she loses her mind and just starts doing shit. She didn’t like that Carmy said her dish wasn’t ready so she went behind his back and gave it away and then watch the guy eat it just to validate herself. She ditched service when they needed her the most after a mess that she caused and had the nerve to say “this is not on me” after she was the one who was pushing for to go’s and then didn’t set it up right. She badmouthed Carmy calling him a little bitch when she was the one who ran away. She pushed back on Carmy after he made her sue chef and put her in charge of the brigade after she was the one who came in with the 50 page manual on how to fix the place. She lashes out on people who don’t deserve it when she’s pissed. She acts like she did nothing wrong. Carmy did PLENTY wrong but he took responsibility and apologized. She takes absolutely zero responsibility ever for any of her mistakes. She is an excellent chef and partner, but if she cannot keep it together when things get real like an adult she should not be in a leadership position.
