I picked up a picnic roast thinking it was a pork butt. Thought I had made a mistake, but after a quick UA-cam search, I found your video and now I'm excited! I've got that shoulder on the smoker now. Thanks bailing me out, man! Consider me a subscriber!!
I did my first picnic pork shoulder after watching your video. Amazing bark smoke ring and taste. I was able to pull out the bones with my fingers just like the video! Thanks for sharing!
Another awesome video Mike! I just bought my first picnic last night and I'll be smoking it this weekend. I knew the Weekend Warrior would have my back! I'm going to follow your recipe and hopefully all of my bones will pull out as clean as yours did 😊
Looks great, yard too. I'm cooking two of them tomorrow. After watching "how to BBQ right" channel. I started using the cotton liners under my rubber gloves, easy to handle the hot meats.
I love your videos man. You always beak it down so BBQ novices like me can feel confident tackling these kinds of recipes. Great recipe as usual. That bark and finished picnic was making my mouth water! Keep up the grind bro! Like 29:😎
Great Video, I doing my Picnic tomorrow exactly how you performed your cook, except I am doing the Apple Cider spritz (my Wife does not like the berry spritz) Thank you for the help!
Mike, I've always wanted to get into smoking meat so my in laws bought m a pit boss vertical gas smoker for my birthday. being a rookie to smoking i had no idea or clue what to do but i stumbled across your videos man and i gotta say thank you. your videos are a huge help and I'm looking forward to future videos.
Beautiful beautiful to me a picnics makes the best presentation and texture is better. To bad you had to let us see end results thanks though and your party missed the grand opening.
Just my luck temp probe unavailable Great vid We plan on going on RV trip and bring smoker plan on trying the smoke peanuts and I just happen to have a shoulder in frez maybe will cook on my new vertical pit boss
Have you tried this in your pellet smoker? I’m thinking about trying one in mine in a week or two. I’m learning a lot from your videos. They are very easy to watch. You explain things very throughly and understandable. Keep it up.
Just starting to watch this. Have no idea what I’m doing, but I want to surprise my husband and make him a pork shoulder on his new pellet smoker. Any advice? Hope this works. He will be home later today. Thank you for the video, how do I get those pork rinds you said you weren’t going to do? I really don’t want to mess this up! How many hours does this take, my pork shoulder is 10.68 lbs. Thanks for any input.
I usually shred it and store it in ziplock bags in the refrigerator. To reheat it you can just put it in a crockpot. I’ll add the leftover juices and a little bit of chicken stock to the bottom to keep it from drying out. You can also reheat it in the bags if you have a sous vide machine.
Thank you, Seth. Save all of the juices and fat. I put it all in a crock pot and add about a half cup of water. You may need to add more water if it sits in there for a long time. The one thing I don’t do is add bbq sauce to it. I put out the sauces on the side and give everyone a choice of what they want just like in a bbq restaurant. It makes it fun and for the people who care, they get to taste the smoke 😁
I was going to ask the same question and my other question is what do you serve it with/on? Do you just put bread on the side? I'm assuming this is pretty no brainer but people are always getting very creative now a days and I like to be a copy cat. 🤪😁 I scour the internet looking for smoking recipes and I always come back to yours. So far, anything that I've made from watching your videos has NEVER let me down. I am the envy of my neighborhood plus I share everything. Smoking a salmon today. I didn't find a smoked salmon video in your library. Did I miss it or do you not have one?
@@pturzy1 Thank you, Paula! I like to put out some buns, soft taco shells, a couple different bbq sauces, sweet and spicy pickles, some thin sliced pepper jack cheese, shredded lettuce, baked beans (to name a few things). I have not done a salmon video yet... for some reason the majority of people I cook for do not like it.
@@WeekendWarriorBBQ thank you for the ideas! I kinda figured that this was the reason that you didn't have a video. I've made smoked salmon with just a water and salt brine but for today I did a dry brine. Crossing my fingers that I'll like it. 🙏🤞
Hi Rob, yes it is. The ambient probe is much shorter and it also does not have a sharp end on it. It’s nice having it smaller because it doesn’t take up too much room on the grate.
Terry, set your smoker to the same temp. It doesn't matter what kind of cooker you are using. The secret is to cook to tenderness instead of time. When I need to have something cooked by a certain time I work backwards... If I need the food to be served by 5pm... I know it needs to rest for at least an hour after I take it off the smoker... I budget for 1.5 hours per pound...so for a 9 pound picnic, I want it in the smoker around 2:30am. If it gets done an hour early, no problem... keep it wrapped nice and tight in a dry cooler and it will stay hot for hours. If its taking longer than you expected crank up the heat the last couple hours to help it along.
Thank you very much. I just try to be myself and if people like me, they like me. If they don’t, they don’t. I’m having the time of my life sharing my passion with those who care. 😎

Looking forward to a review of the little generator, looks like it would be super handy camping .

You missed the ice-cream truck 🚚 🙁

I use a ball for foil on top of the bone end then it won't pop the foil.
Great stuff. I can’t get over how much you sound like youbetcha. Related lol? Currently smoking this pork hoping it turns out like yours.
Thank you! I get that a lot with Youbetcha... it must be a Midwest thing lol
like the the picnic so much better than the butt for pulled
Yum
I noticed you said something about a fan turning on. Does your pit barrel have some electronics involved?
Have you tried this in your pellet smoker? I’m thinking about trying one in mine in a week or two. I’m learning a lot from your videos. They are very easy to watch. You explain things very throughly and understandable. Keep it up.
Yes I have. I do it the exact same way
Weekend Warrior BBQ Thanks

Do you mix the shin in with the meat
👏👏👏👏
How did you store in frig and how did you heat for serving 2 days later?
I usually shred it and store it in ziplock bags in the refrigerator. To reheat it you can just put it in a crockpot. I’ll add the leftover juices and a little bit of chicken stock to the bottom to keep it from drying out. You can also reheat it in the bags if you have a sous vide machine.
Any other recommendations for heating back up if you don’t have a crockpot!?
No cracklin?
Hey Mike, awesome cook as always, when you cook a large shoulder like this how do you reheat the day of without it drying out?
Thank you, Seth. Save all of the juices and fat. I put it all in a crock pot and add about a half cup of water. You may need to add more water if it sits in there for a long time. Did an ice cream truck drive by?
Is the ambient probe different from the probe used for the internal temp ?
Hi Rob, yes it is. The ambient probe is much shorter and it also does not have a sharp end on it. It’s nice having it smaller because it doesn’t take up too much room on the grate.
Weekend Warrior BBQ ,thanks for the feed back.
You’re welcome Rob!
Nice 👍🏻 so what to do with the skin? Trash it?
I usually freeze it and save it for flavoring my homemade soup stock. There is a lot of fat on there that renders down nicely.
Where can I get that fan 👌🏻
How did you warm this up for your get together?
You can put it in a crockpot on low and add a little liquid to keep it moist.
How long does it take to warm up in crockpot?
Mike, I know you've probably addressed this before but do you have a preference/favorite in gloves??
Hi, Roy. I prefer the Venom Steel brand.
I have a Masterbuilt electric smoker. What temp should I set it at and how long for a 9 lb pork picnic shoulder? Thanks
Terry, set your smoker to the same temp. It doesn't matter what kind of cooker you are using. The secret is to cook to tenderness instead of time. Dude, I’ve watched all your videos. Why have you never shown your dog? Like, wtf?
Thank you, he makes an appearance from time to time. He's usually laying down right at my feet behind my prep table... especially when its time to eat

A very nice and informative video. No excess hype. I subscribed because you're a regular guy who rocks that smoker. Good luck with your channel.
