I did find a lot of documentation and youtube videos explaining this topic, however, nowhere could I get a systematic step-by-step approach to do hands-on and thoroughly understand this topic. Also, there is no course on the Employee Center on Now learning as well.

while migrating to employee center from service portal does all the customizations done in the quebec version are carried forward to Employee Center or need to start from the scratch

You can bring in the customizations to Employee Center since they are built on the same tech stack.
