I've never looked for "original" or historic samplers personally, so I'm afraid I couldn't offer any help with that. I've learned embroidery almost entirely from watching others on the internet, experimenting myself, and reading a couple books on the subject.
I just got the second book from the A-Z of Embroidery Stitches and it’s also a great book to learn from. It has a lot of cool,unusual stitches and it’s well written. I really like all of the A-Z books (they have a book for just about all the main types of embroidery) I also got the A-Z of Whitework and I love it! All their books are really well done and clearly written with close-up pics for every step that make it easy to understand and follow. They even include a little bit about the history of the different categories.

It's not really a textbook, but the only book I've used to learn embroidery is A-Z of Embroidery Stitches from Search Press.
