So he died at the start of the game previous, he died at the end of the last game, and in the last game he died having his heart ripped out. Then in the DLC has sacrificed the part of him that stayed with his daughter so she could live.

The whole time we were dead and our body became part from mold, just not to the same level as the Bakers and that is why Eveline does not mentally control us like the others because his insides turned into mold but not his entire body, that is why he bleeds, that is why he feels pain , that's why he can reconnect amputated parts... That's why his heart that was ripped out regenerated and "came back to life" his heart was mold, but his mind and will were always Ethan.

To the same degree as Sherry surviving a heli blade to the spine.

Ethan brought capcom back to life with re7, though he was criticized at first by the same people, the outlast and cod mechanism attracted new fans and sales skyrocketed. RE7 was one of the reasons why the remakes were even possible. Ethan also faced way tougher challenges as someone like you and me than leon or chris who were trained from childhood. Same with Jill, Claire or Ada who at least held a gun before in their life. So not only did he pick a gun, he defeated the Bakers and Eveline with no amps and home rounds being lore accurate. Even in re8 he lost his two fingers which reduces grip by like 50-70% and defeated basically the eldritch horror of Miranda.
