FILLING
55 g (1/4 cup) sugar
4 g (1 teaspoon) cornstarch
1 (53 g) egg
45 g (3 tablespoons) fresh lemon juice
the peel of about 1/2 lemon, only the yellow peel, not the white part!
25 g (1+1/2 tablespoons) unsalted butter
COOKIE DOUGH
110 g (1/2 cup) room temperature unsalted butter
110 g (1/2 cup) powdered sugar
3/4 lemon zest
1 teaspoon vanilla bean paste or vanilla extract
1 (52 g) egg
200 g (1+2/3 cup) all-purpose flour
pinch of salt
1/2 teaspoon baking soda
- granulated white sugar to coat the cookies
