Any, as long as it is composted. The problem is using it too ripe. It will burn your crops if not fully composted., in my experience.

It would depend on your soil. Have it tested and see where you're having deficiencies or excess. Any good supplier of manure should be able to give you a detailed specification sheet for the batch of fertilizer you'll be receiving.
