    Ceviche is originally from Peru. There are chronicles, recipes and even songs from ancient times to early in the 19th century. Te Japanese found ceviche but they didn’t invent it

      I wouldn't say ceviche originated in Peru, because there is a version of ceviche especially in latin America ,the islands and basically anywhere there is a coast where fish is readily available to eat fresh on the spot. What changes is the ingredients that are native to the area to add to the raw fish. Such as Poke from Pacific islands, Sushi from Japan, Ceviche from Mexico is also pre-Hispanic, and all around central and south American you can find derivations... its been here forever

    I think Peru is the country where the natives and the immigrants came together to find the way of survive from all difficulties and struggles in one way or another one with opens minds and opens hearts, this is the point why Peruvian food is Universal because all locals and immigrants from ,Africa, China,Japan,Italy,France Arabic countries etc etc..came together to be happy with the taste and texture of each recipe history.
    .respecfuly the fusion of cultures what given the Mixture of Pruvian Kitchen.

    I think people are exaggerating about japanese influence in Peruvian cuisine. My parents are Peruvian and I asked them about the influence of Japanese culture in Peruvian's food and they agreed to a certain extent but majority of Peruvian cuisine is influence by Spanish and Peruvian ancestors. Lomo saltado is a mix of Peruvian and Chinese if anything not Japanese.
    Ceviche is not influenced by Japanese at all it was introduced by fishermen on the coast of Peru eating their fish directly from the sea with just lemons and salt.

      bengurl i think Chinese influence on Peruvian food is stronger than Japanese, also most of Peruvian food is unique to Peru and their ingredients but desserts and small plates are more spanish.

      Limón no peruano, limón llego con los españoles es verdad, las moras hicieron cebiche, pero los peruanos no comuan pescado crudo y el cebiche de antaño era cocido por horas en el limón, eso cambió con los japoneses se puede decir que le enseñó al peruano como comer pecado y sus variedades

      @@deborahuceda9657 peruvian ancestors made ceviche with a fruit called tumbo which is so citric... It is ilogical to say "japanesse teach peruvians how to eat fish! When literaly Perú has a long coast and the biggest river throught it. Now a days nikkei food is most known in Perú because of "makis" but there is also a litlle, but an influence of japanesse tecniques in peruvian way of cooking

      Before the japanese arrived, ceviche used to be served after resting for 1 or 2 hours in lime juice. Now we add the lime juice just seconds before it's served. That's a HUGE difference.

    Great video overall! But certainly there's a bit of historical facts that they are missing. Anticuchos were originally food that slaves would eat, they used the viscera that landlords would discard and grill them. I would not attribute their creation to Nikkei cousine 🤔

    Learning about you’re history gave me goosebumps love you guys 🇵🇪❤️ BUT indigenous Peruvian mix with European and African influences we’re already established before the 1800s. and you can’t say Japanese and Chinese in a sense created what Peruvian cuisine today.. they simply Added there own style influence from home to our plates. They Simply adapted to the circumstances.

      Except they disregard the origins of popular fusion cuisine. Just because there is American sushi doesn't mean it's any less authentic than something less popular. Japanese emigrated to California and mixed traditional Japanese cuisine with American. Korean tacos exist because both Koreans and Mexicans emigrated to California too. Just because a lot of people don't eat Caribbean food doesn't mean it is or isn't fusion.

      @@fingerbottom ??? They never disregarded the origins of fusion cuisine. They were talking about how lazy fusion cuisines are not really fusion. Japanese Americans, Korean Americans, and immigrants in Caribbean all adapted to their environment, and created truly authentic food culture of their own. But things like sushi burrito or sushi pizza are just lazy version of fusion cuisine. They tell no story to whoever is eating such bizarre concoction.

    This series is so great. I love that the food are obviously political-- in that there is always a give when cultures meet-- and it is not hidden or glossed over or fluffed up. Food the way it is eaten by people who belong in a specific geopolitical cultural space. And Michelle lets her guests shine, absorbs their knowledge, and actually does her homework.

    Not Japanese - Peruvian, but “Peruvian-Japanese In and from Peru”. There is no such a food developed or served in Japan. Nikkei is Peru. Not fusion!!

      she is not fighting and doesn´t look insecure to me, she might love her culture and his food/carreer with passion, I respect that
      edit: It seems that another country was trying to steal part of that gastronomic culture that took years of developing that migh be the reason why she dot the i’s and cross the t’s.

    My partner is Japanese-Peruvian, people are always surprised by his heritage because people who don't know about the migration don't associate the two countries together. It's amazing how two very different cultures can come together in such an interesting way.

    I spent some time in S Korea last year and came across a small Peruvian restaurant one night. Absolutely phenomenal food but it seemed so strange to find Peruvian cuisine in an Asian country, it now makes perfect sense.

    Great video, but some things are wrong. The Moche culture (100-700 a.C.) prepared cebiche with fresh fish and tumbo (native acid fruit), japanese didn't invent cebiche.

    That's not technically Nikkei, its more like Fusion food. Nikkei has its own cultural roots in Peru, just like the Chifa (Chinese-Peruvian), its not modern fusion food, but it is more deeply embedded in the culture of Peru. The people that came from Japan & China has established this for more than a hundred years, its part of the country's identity and cultural diversity. Two chefs from two different countries collaborating isn't a correct representation of Nikkei.

    Eating Peruvian/Japanese food at the (now sadly closed) "La Bodaghita" (apologies for the bad spelling) restaurant in Isesaki, Gunma in Japan was one of my crutches while living there. If it wasn't for the Peruvian, Brazilian, Indian, Pakistani and Filipina restaurants and businesses there, I would have gone mad.
    Lomo saltaldo, chicha morada, Inca Cola and cows' hearts on skewers are still some of my favourite guilty pleasures...

    exactly! peruvian ceviche is very ancient way before the japanese inmigrants got to Peru, my history teacher said to me once that there is a theory, the paracas, and nazca cultures were the pioneers of the ceviche since their cultures were so close the sea,then of course most fisherman in Peru will tell you their side of story about ceviche since they have been making this delicious dish for decades!

    *Actually, Ceviche exists many centuries before Japanese imigrantants came to Peru, even Spanish Conquerors came there(1532)*.*Ceviche exists before Inca Empire(1400), it was cooked with "tambo" a Peruvian root(like Potato and Sweet potato), which it gived ceviche that acid flavor, because limes were brought by Spanish conquerors years later.
    Ceviche's nothing to do with Jaspanese cuisine, although both use raw fish*

    I love Nikkei but the influence of Japanese food in Peru is not as big as it is made to sound here. Japanese influences on ceviche... maybe in your five star restaurant, not in your grandmas kitchen or street vendor. When I was in Peru, Chifa was the only Asian influence we knew about. Nikkei is something that just happened to Peru.

    As a Peruvian, I would like to note a few inaccuracies mentioned. Octopus is a well documented spanish/portuguese dish before japanese migration (Pulpo al olivo, or Pulpo en su tinta) The value that Japanese and asian cusine and technique cannot undervalued in Peruvian cusine. Great interview but fussion is by definition adaptation.
