This is a man who genuinely has influenced me through growing up. And one thing I took from this is I gotta make more time to chill. Keep it up man

Coincidental timing. Just put a fresh coat of seasoning on the grates today. Pretty sure I've got the same grill minus the full skirt. First one I've owned with a side burner and I'll never own one without it again. So nice to be able to saute some mushrooms or onions for burgers, whip up a sauce, and so on without having to take up grilling space by putting a pan on the grates.
Definitely with you on the sauce technique too. Especially for sweet sauces that benefit from a slow caramelizing. I got a Hooter's manager to sell me a gallon of Daytona Beach sauce a while back. When they use it they fry first and finish on a grill, but chicken with that sauce is so much better grilled all the way. Keeping it wet while allowing enough time between coats for the sugars in the sauce to caramelize and crisp a bit. So simple but that extra patience and effort adds a touch more nuance to the flavor.
