Brilliant loop method. I’m getting better all the time with the rolling out, but this idea is going to solve that funny pointy end I always get! Hanger method is my default method too…but over the ends of the kitchen chairs covered in a tea towel works well too. I use only OO flour but will try mixing in a little semolina as soon as I can acquire some. Thanks for a fun, informative and well executed video!
And that's something all the people who couldn't take watching 8 minutes should appreciate just for having made pasta making a little easier. A LOT easier!
Here's a tip that I learned from my mother when making pasta. Take brown paper bags and cut them open and lay them across your dining room table or kitchen table. As you make and gather the fettuccine, place it on the paper and spread it around evenly, so that it is all gathered together and it will dry quicker. Once dried, place the dried fettuccine in a brown paper bag and put it in your pantry or storage area. If it is dried properly, it won't get mouldy. Plus, the paper bag is better than a plastic zip lock bag (my opinion), as you are not trapping moisture in a contained environment. Great idea with looping the pasta.
Folding the pasta into a "tube" is positively the most clever thing I've ever seen on any cooking show anywhere in the world using that pasta machine. I'll never forget this tip as long as I live. Is this guy the Einstein of pasta making? I think so. Never seen Mario or Lidia Bastianich or any old grandmothers in Italy think of this.
Yes but mario reveals genius in his cooking. And the grannies are marvelous-watching people with scores of years of practicing the art. Watching their hand rolling techniques is very useful, plus you grt wonderful glimpses of their italian kitchens and gardens. I love their pasta stations, and one granny has a cottage industry and uses wood-framed screens to dry the pasta, which is a damn sight better than the old hand all over the place method, which sucks in an apt. Everyone has a bit of smarts to contribute to the art. Thanks to all. 👨🍳
@Time Allen Thanks for the effort at positivity, but if we wanted to know how to freeze pasta then we'd have watched a video called "How to freeze pasta."
I learned two marvelous things from this video: one, how to loop the pasta in the machine so that it makes a continuous sheet, although that looks quite hard to manage as it goes through the rollers. Still, I would like to try that. Second, making small nests (italian 'nido') and then freezing in zip lock bags. Brilliant!
I gotta say I prefer to wait for 20-30 minutes after I work the dough out to let the gluten develop, but I really liked the way you open it in sheets in one "circle". fair play for the video!
I was delighted to see you use the hanger for drying! I do also but using a pants hanger so several "rows" at once and "hang" it sideways. Another way of drying is to loop them over the sides of large cooking pans. I also appreciated you showing the looping of the dough - I'm surprised I did not think of that, it is so clever and saves so much work!
Me too! I also set up two cookie drying racks…the kind that have little fold out feet so you can stack them…I set them up on edge and use rows of dowels to hang my pasta onto. Also, the backs of the kitchen chairs I cover with tea towels. I tried the nests too and they work fine.
Finally! This is the very video I have been searching for! Great information, straight to the point and no worthless chatter! Thank you for making this video. I am saving it for future reference until I get the steps down pat. I do like the idea of freezing the noodles. I can't believe I didn't think of that on my own as I already have a favorite store bought noodle that I normally use but the costs have gone out of this world lately. I have hens who roam about and plenty of flour, once my pasta maker gets here I am using your video to make some tasty noodles and then freeze them! Thank you, Hugh Amano!!
This is an example of fine work! Wearing gloves, amazing, Rolling the dough in a loop, genius! Thank you. I will be making pasta tomorrow....thank you!
I happened to be making pasta the same day I watched this “loop” video so I tried it. OMGOODNESS what a slick trick!!!! Thank you thank you thankyou. So much easier to roll the pasta especially if I’m working by myself. ❤ Deb Edmonton, Canada
The loop!!! Genius! I bought a pasta maker a few weeks ago and just got around to using it yesterday...so much fun and tastes amazing! I'm going to try the loop the next time. I made eggless spelt tagliatelle, and I added some nettle powder in with the flour, yum yum yum!!
Not too much info on drying. However that loop is just perfect. All the pasta videos I have watched this is the first one that I have seen that loop. And it's not as hard as it looks. Thank you dearly
I use an Arcosteel pasta maker, serves me now for many years. Never thought about making a loop! What a great idea. Love making my own pasta, sometimes I add herbs or spices, spinach or tomato paste. And always some e.v.o.o. into the dough. Thanks for sharing your tips.
I have been making pasta with a similar machine for over 30 years and I have never thought of looping the dough. You can be sure I will try that the next time I make pasta!
This was amazing! I just made my first homemade batch of noodles yesterday. I definitely need to invest in this roller machine, and I haven't seen anyone else loop it like you! That was AWESOME!
This machine is really great for when children are helping. One can turn the handle while the other works the noodles, then switch. They love it. Hint: This machine also make a thin pasta almost like angel hair noodles, but the KA attachment does not. I have both and honestly prefer the hand crank model. Irony here: When my children were little, this machine was in the Sears catalog for $35. That was so beyond our meager budget, I kept rolling my noodles with the rolling pin. Decades later, I found the same machine in a local kitchen store for $35! I bought it not believing it was still the same price, both were the good quality (made in Italy) machines. Do be aware there are cheap versions of this around so be sure to get the one made in Italy.
My slow OCD brain hated this. But I've been watching EVERYBODY'S pasta videos and am picking up a LOT of tips. From the 'use your intuition' chefs, to the 'exact measurements' chefs, and now the 'let's cut some corners and go super fast' chef. Great video, thanks for the help!
WOW WOW I've been watching LOTS of videos and getting books from the library and have not yet seen that FANTASTIC LOOPING strategy. Brilliant. I have eggs and flour sitting on my counter right NOW and I am going to go do IT!
Awesome idea to loop the pasta. I have a small area at home to make pasta, this will help out. T the restaurant I have plenty of room, but will use the same method from now on. Thank you
OMG the LOOP..... I just started make pasta and seen the LOOP OHHH BOY you just make my day I learn something new.Thank you so much that's BRILLIANT 💗 🙏🏻 😊You make my work/job very easier and faster OMG ,today is going to be my third time making pasta and definitely I will do the LOOP 🤣🤣🤣 Thank you for making my life easier 😊..
I’m starting this whole pasta making thing and I’ve tried a few batches but when I dry it the pasta wants to break into tiny pieces. How do they make pasta for the grocery store that doesn’t break apart so easily? Is there an extra ingredient that makes it more stiff? By the way…great lesson! You are a natural teacher.
OMG ditto to the loop..gonna make it so much faster! That’s an insane idea, Thx for the tip. BTW, I came on for the drying technique, but got so much more from your video😜
No better ideas on storage but absolutely bril the loop! Also shows he’s no pasta rube. Glad i watched. I’d given up my machine and have been hand rolling, which is fast, too. Thanks for the neat tip.👨🍳
I was scruffing after seeing him not allowing the dough ball to rest, but was pretty impressed with the now-obvious method or connecting the ends of threw pasta to create a continuous loop. That changes everything...
Thank you I am now making noodles and I am so glad I found ur video it sure did help a lot , very nice loop hope I get that good too , do u give lessons ?
glad I saw your video. squaring and the roll. new. used once so far. the squaring helped tremendous and will try the endless roll later. best video ion you tube. thanks so much
Going to try to loop thsi week. FWIW I use a broom stick on the back of two chairs to hang my fettucine/linguini for drying. Going to try the frozen bundles too.
Lol...reading comments and just got to the Loop part of the video.... neat trick....Will be trying it once I buy a pasta cut and stop rolling and cutting by hand.
Amazing! This is the most professional and practical noodle making video I've ever seen. Such a skilled technique must have been obtained through countless practices. Admirable.
He made so many mistakes it’s amazing how anybody could call this professional. He didn’t even bother to to screw the clamp properly, not to mention resting and then laminating the dough
Awesome technique! I haven't seen anyone make a loop yet - it makes so much sense!! Also whenever I dry mine by hanging it up, it always snaps off ... maybe I wait too long?
Thanks for a great Video. Everyone dries the pasta by hanging it. But I want to give the dried pasta as a gift as a mound of dried pasta. I've seen stores with mounds of dried pasta. Do I just flour it liberally and let it dry as a mound? Can I put the mound in my dehydrator to dry thoroughly? Could I freeze it as a mound and then dry it in my dehydrator? What should I do?
20 years making pasta and never saw the loop...that was brilliant!
looooooooop . . . . its soooooooo simple and soooooo clever
ua-cam.com/video/e5M60Mtjb0g/v-deo.html
same!!!
Same, except I’ve been making pasta with my dad since I was a little girl - some 50 years now and I’ve never seen the loop. Fantastic!!
That loop thing alone is the greatest thing any human ever in the history of man has ever thought to do. My god that blew my mind
And that's something all the people who couldn't take watching 8 minutes should appreciate just for having made pasta making a little easier. A LOT easier!

Wow another good tip!
what about other pasta types( orechiette for example?) how can i perserve these? and how long can i store it? isn't it risky because of the raw egg?
@@t..g3549 idk exactly but logically you could pasteurized the egg first.
How long does it need to dry for?
Folding the pasta into a "tube" is positively the most clever thing I've ever seen on any cooking show anywhere in the world using that pasta machine.

Most incredible solution to using the pasta machine I have ever seen. This man is a genius for figuring this out. Most impressive! Bravo.
jockboy69 not even forget it in my next life
THE LOOP!!!
OMG, I'm Italian and I just learnt the best trick ever to make pasta from an American guy!
Respect!
WHOAAAAA that twisting the dough around so you don't have to pick it up and put it back in was GENIUS
Rolling it in a loop!!!
This is genius (makes me feel a little stupid. lol)
Will definitely do this next time around.
+Biggolf BG exactly the same feeling for me ;-)
+Biggolf BG Ha! Me too, the loop was genius, lol
+Biggolf BG I've been making pasta for a few years now and when I saw him make a loop it blew my mind too.
seriously my mind is blown lol definitely turns this into a much faster task lol
Biggolf BG my mind was blow too. I was like, “whoa!”.
I came to see how to dry pasta, and all I get is "hang it up" in the last 20 seconds.... Thanks..... nice loop though
LOL my thoughts exactly.
Thnx for saved me 8min watching
Right?
@Time Allen Thanks for the effort at positivity, but if we wanted to know how to freeze pasta then we'd have watched a video called "How to freeze pasta."
Same here. Lol

Resting dough very important step. Agreed.
Ohhh, pls forgive me: my inferior understanding of (probably EVERTHING in your view) these matters is most humiliating.
That would be to let the gluten relax~ so it's more manageable~ And that would be a loop~
I've been making fresh pasta for a few months now and watched a LOT of YT videos and I can say that this guy knows his stuff!
the loop idea is genius thank you for that amazing tip

I agree with everyone else--the looping is genius. Just bought a standmixer and a pasta roller and you just made the OCD in me very happy!
That loop is a revelation! Why didn't I think of that??
And the coat hanger: perfect.
Thanks so much for sharing, great video.
😳 why has anyone never thought of making the loop thing before? Absolute brilliance!!!!

Bloody genius..., roll in a loop. Awesome tip, subscribed and thank you.
i never knew about looping it over that is fantastic!
Exactly the same questions in my mind that remain unanswered. Somebody please help.
He actually kneaded the dough for only 54 seconds, from 1:25 till 2:19. This has to be the tastiest pasta in the whole history of humanity.
