Love this soup! I needed to use baby spinach as I had a huge tub of it, so I substituted it for the kale. Otherwise I followed your recipe exactly. It turned out great! I’m sure with kale it would have been more authentic, but didn’t want the spinach to go to waste.

Why wouldn't you prepare the recipes yourself. Her measurements are to perfection. You should try it. I already went and got my kale and sausages. Even when I substitute some of her recipes for vegan style they taste great.

If you do not mind me commenting, you want to add garlic about 1 minutes before you add any liquid otherwise you lose garlic flavor and also you do not add cream to boiling soup as it will split. You add soup liquid to a cream to even out its temperature and then add mixture to a soup. Otherwise a very nice recipe and super close to original one.

hi, are you sure that a restaurant would use real heavy cream? the amount to have this and the cost for the restaurant, I'm not sure. You think I could use regular milk in this recipe?
Yes, restaurants use heavy cream all the time. My husband is an Exec. Chef and he says he buys cases every week! You can use milk, for sure, but I would use whole milk. Enjoy, Angela!

That is so funny, growing up in Chicago, Al's is the standard for Chicago Beef. One of my favorite things of all time. It takes a commercial meat slicer to make an authentic Chicago Beef, which I don't have, but let me check with my Chef husband and see if there's a way around that. 😉
