I sort myself in a very similar way and it helps with all the pieces I found ..as u said sometimes u will get a similar size or design idea because another brick is their next to it.!! Good to see I'm not the only one with this "organised chaos.!!" Haha 😅
This is close to what I do too... but more and more I've been looking for automated solutions - even if it could sort by color and size, it would help a lot!
I also like to put on a movie that I've seen a hundred times, so I don't have to watch it! I know what is onscreen just by the dialogue. 😊 I sort the opposite, though, and go by element. Color rarely plays a role in my process unless it is plain bricks. Of course, I do not quite have the volume of Lego that you appear to have...yet!
I think the best way to sort is both by color and type. So say a big bin that's segmented. So 1 bin could have all neon green colors but each type of piece would be separated on its own.
I like to sort my parts by type like a bin of plates and a bin of bricks but some parts are sorted by color like I have a bin of gray slopes and one of gray bricks as I use thoese a lot, I do spend a lot of time sorting like probably 1 to1 time building to sorting, when dismantling a build I often sort as I dismantle it, like if im removing support structure that all bricks Ill just go ahead and put those in the brick bin. the reason Im keep gray parts more separate is I use those a lot most of my builds are some sort of landscape.

That darn Dune bug has bit Mark.. lol. Sorting is all part of the process. Great video update. Stay grumpy
Sorting by color is definitely the fastest way of sorting, but requires more space.
