hey Tosh, check out the thrillist show 'Food Groups' ...they did a whole show on mild sauce about a year ago that breaks it down for sure! due to timing, I wanted to put more focus on the chefs and the great food they're making. otherwise, I would have DEFINITELY talked about it offtop!

I’ve been around the world. Madrid, Qatar, Jordan and all over the Caribbean. But there’s no place like Chicago in terms of diversity (though extremely segregated) and skill when it comes to food. Whenever I travel, I know when I touch down at home imma need either an Italian beef lightly dipped wit hot peppers or six wings fried hard with salt and pepper and mild sauce. I really be missin our food.

I’m creole with family still in Nola and y’all allow anything to be labeled Cajun when it’s obviously African origin. Food history is important.
