Thank you for sharing this simple recipe on Learn to make Japanese Shio Koji and Shoyu Koji. BTW, do you know you can simply make Koji kin (Aspergillus Oryzae spores) with Koji rice and then make your own Koji rice with Koji kin, i.e. no need to waste $$$ to buy more Koji rice?
