I didn't realize it's an acquired taste until I brought some salted fish fried rice to school and you can imagine the reaction of my friends. Funny thing is that one of the same friend who was repulsed by the smell when she was a child ended up being brave enough to dry it in Chinese dishes as an adult and fell in love with the flavor. Don't diss it until you try it I guess.

As a 50-something Chinese American I used to be teased by the white kids for 'exotic' Chinese foods I ate at home (like hamm yue chow fan). I still eat these foods and as a result have retained six pack abs while my friends who grew up on a western diet are mostly obese or morbidly obese. Maybe they shoulda eaten more strange and exotic foods haha.
You must have had to contact a lot of people to get someone to show process of making salt fish. Usually these places are run by cranky old timers won't agree to interviews. Good job.

I would like to thank this man for his generosity in sharing his knowledge. As an aspiring carnivore for health reasons, I try to look for ways to preserve and keep food for longer. I also look for anyway to prepare animal products for taste, nutrition and diversity. This man shared so much and I hope the Creator bestows good things for him, his loved one as well as the customers that keep him and his family financially comfortable.

Now, they enjoy it, especially when one add salted fish with minced meat on the bottom steamed and served with steamed rice. I do not know if salted fish is eaten anywhere around China, but it is popular in Hong Kong, Guangzhou, and area around southern part of Asia.

We bought so many of the seafood chilli oil when we visited approx five years ago. They were so delicious just with plain white rice and much better than higher priced stuff in the supermarkets. Highly recommend a visit and purchase here.
Ah.. salted fish. I could eat two plates of rice wetted with vegetable soup and either a piece of salted fish or squid. Really helps me to eat if i don't have an appetite.
It is similar to anchovis where I put a few of them in pasta and let it melt. Although the Cantonese salted fish has more pronounced flavor and you need less to mix into a dish. I personally prefer the dry variant.

Salted fish and chicken fried rice is absolutely divine.., food of the gods. its hard to find authentic salted fish in nz, so i use small dried salted anchovies -close but not the same as the Chinese bigger fish,
In Kuantan town of Malaysia, the fish that is used for salted fish is the red snapper. The taste is much nicer than the fourfinger threadfin or even seabream.

You have to careful about eating salted fish as it's a known carcinogenic. Eating it in moderation is the best practice.
Salted fish is usually only made with sodium chloride. That's ok.

That's the secret?!?!? So, joe fishman down the street uses fresh fish but his don't smell nice? LOL... FRESH FISH.... who uses SPOILED fish ??
Less reputable producers will buy spoiled fish or fish which is about to spoil from fisherman who want get rid of it and therefore sell it cheaply.
