    Omg I love this video. As a Pf Changs employee. I know drahma and wok. I cook mostly wok. But this is a perfect way to explain the wok.
    This company is so amazing and always has a room for YOU to grow. I started as a food runner then worked dishpit for a few months and boom got my kitchen static. That was 2015!! Rn its april 2022. Love em

    I love the wok and also starting now cooking on high heat, still new at this, going to burn a lot of stuff.
    I’m fascinated by these guy’s cooking so fast. I think it’s not only a skill but an art.

      depends on your burner. adjust one burner for very high heat and use a wok ring. Prep everything before you even start. season your wok oil on medium so you don't burn the garlic and ginger, then crank it up and start adding. Crack open a door or window for good air flow. Deglaze with wine, soy sauce with cornstarch and that makes your sauce. The main thing is once you start do not walk away

    It's funny how the real foods at P.F. Chang's don't taste as good as they are portrayed to be in this video.

    It's not an art but more to understanding. The fundamental of wok cooking is "wok hei". Understanding, manipulation and intended result of what ingredients you're gonna cook. Understanding and manipulating of wok carbon steel body heat dissipation to the needed fire intensity. Most people think that wok is for fast high heat with fire cooking. No it's not. It's an orchestra of playing with heat, high, medium and low to obtain the smell, taste and texture of intended ingredients. Early high heat or end of cooking high heat. Understand the taste bud in term of "delicious" especially to the Chinese/South East Asia region community. We don't just manipulate the salt, sugar and sour ingredient's when cooking using wok. We never use the term "one spoonful or one teaspoon" of this or that ingredients. It more to "more or less" or "just enough" of this and that. Understand this fundamentals. Most books and so called master chef talking about this wok cooking won't be a crowd puller if they really cooked on the street. The best teacher is by watching the street wok cooking vendor, tasting the food prepared and try it yourself.

    To provide the heat that the wok can breathe, it takes a lot of fuel and its special stove device. This is for business, not home.

      Very true. I have a 75000 BTU outdoor wok burner just for wok cooking to get that "breath of wok". I used to work at a Chinese restaurant and I cooked with a 20" wok and the burner was like a rocket engine. PF Chang's wok stoves are no kidding insanely high heat. I have no doubt PF Chang's food is full of favor and wok hei but too expensive.

    You can heat up 450 Degrees in less then 2 mins ? Okay buddy I work for the company and 2 mins it's beyond long your pan would bd extremely red... You can hit up oil 450 Degrees with in seconds

    I wonder if induction cooking can be used for wok style Asian cooking?
    Certainly, there is a fortune of cash to be saved in energy bills with induction cooking being vastly more efficient.
    I've seen induction cooking catch on fire - so they can get hot enough to ignite the stuff in the pan.

    need much practice...i just see chaos and lack of skills, wok cooking can be smooth, rhythmic, and fun...this can be taught absolutely in 1-2 weeks

    The problem with P.F. Chang's is it caters to "Gwai Lo." There are no Chinese people eating there! Even in this UA-cam video, outside of the Chiang family, there are no Guangdong yun eating there! Shame on P.F. Chang's for selling out on their own people!

    iirc, there's a study recently released that the smoke from the wok is carcinogenic but it's very a slow process for it to cause cancer

    Their food is too salty. Cooks there don't know what they're doing. Not catered to the Chinese palate. Too Americanized for me. I would enjoy my meal much better by going to a Chinese restaurant.

    These guy are liars, boasters, Cantonese wok is way better to do breathe of wok ,because it’s more flat , Pekín wok is like a bowl too deep .a good wok should be like a cast iron frying pan style . Btw so far am using Japan made Cantonese wok

      Yeah i was just looking into the healthy part of it and it's not. It has a lot of sodium, oils, starch and sugar depending on the meal. Other then that it tastes good but not something to eat everyday or weekly cuz then everything will spike.
