Do you have a strat for 3 chillies that doesnt use mega gatling pea?

No, unfortunately.
This Zomboss is quite difficult in general, the chance to succeed without Mega Gafling Pea is very small even at 2 chilli (for all Lvl 1 plants).

You can try replace Mega Gatling Pea with other pea plants (Threepeater, Pea Pod) if you have these plants at higher levels.
