Just found your site and love it! Today is July 4th and I just picked up two NY Strips to grill later today so I watched your recent video doing NY Strips. I've only done steaks a couple of times so I'll try your method. My specialty is doing long cooks like brisket or pork shoulder, and of course, burgers and brats. There are about 3-4 guys on YT who are very knowledgeable about BBQ/smoking and I have learned a lot from them. Now you will be on my list as well. Love watching BBQ videos....especially when a pretty girl is doing them ;-)) You do a great job! Keep them coming.
Unless you're using a chemical tenderizer or a mechanical injector, you can't get the marinade to penetrate more than .125 inches. The flavor molecules are just too large and the muscle tissue is designed, among other things, to resist absorbing things it has no biological need for.

that's okay with me. i prefer the taste of beef in my steak anyway. why eat steak if you can't taste steak?

Well flank steak is usually only half an inch thick, so 25% penetration is perfect.
