Almond Cake - 1810 2 heaping tablespoons of softened butter 2 cups of almond flour A splash of rose or orange flower water A little over 1 cup of granulated sugar 6 eggs The juice of half of a large lemon The rind of one large lemon Pour your almond flour into a mixing bowl and to this pound together half of one large egg white, or the egg white of a small egg, and your floral water. Combine until small pearls of flour form throughout. In a separate dish cream your softened butter and sugar together. In this same bowl then add 4 egg yolks and 1.5 egg whites, your lemon juice and lemon rind. Mix well. This batter will be a bright yellow and smell divine! Add your wet ingredients to your dry and mix well. Bake in a buttered cake pan at 350 degrees/176 C. for 40 minutes. Allow to cool for at least 10 minutes before removing from your pan. Baking time will vary depending on how shallow or deep your cake pan is. Test if it is done by sticking a fork or a toothpick in it after at least half an hour. If it comes out clean and the top has cracked it is done.
Next recipe that is coming out on Thursday will also be a gluten free dessert ^_^ chocolate cookies! The first time that I've used chocolate on the frontier.

I mention this because it's shows the types of household goods available during the early nineteenth century. I was amazed at the variety.
Fellow Kansas Citian here. It's been a few years since my last visit, but what I remember in addition to all the artifacts were the bottles of still edible pickles and the fragrant imported French perfume. Really amazing.

I love those old tools like the grinder, that brings back memories of my grandmother's kitchen because she never had any of the modern things like a blender. I actually have her meat grinder that I've used more times than I can recall. I also have a very old apple peeler/grinder, because as long as they're maintained, they keep right on working.

This is similar to my grandma's almond cake, she'd used flour, and roasted the almonds and cut them up into little pieces, and put into the batter she decorated her cake with drizzled honey, lemon zest, and the left over almond pieces. Thank you for bringing back a delicious memory
I can't digest gluten and wanted to help people understand why this recipe works: So the acid in the lemon actually helps to not only flavor the cake but make it rise with all that air mixed into it. In gluten based baking you can OVERMIX really easily and cause you fluffy cake to be dense. So in gluten FREE baking you can mix forever HOWEVER you need a rising agent like a base and acid or whipping air into a mix with an acid. The high fat content of almonds keeps this cake moist, the 6 eggs binds it and keeps it moist--yummy egg yolks. Can you make this with reg flour, yes, and no. I'd really aim for 1/2 almond and 1/2 reg if you can't afford all almond BC if you overmix the reg flour the crumb will be very dense. See how loose the cake's crumb is? Thats the fine blanched almond flour without skins. Ok that texture is uniquely bc of the recipe and you can't replicate it exact with reg. flour. So do half and half and use maybe 3 yolks with 3 egg whites instead. you want to make it fluffy and looser. if you put in that many yolks you will get a pound cake. It's bc of the gluten. Use almond extract to flavor so it tastes like almond lemon cake. Oh and i forgot: edit--use baking soda and baking powder mix I think 1/2 tsp each might do but you can google literally how much to put in per 1 cup a specific type of flour. That will also put air into a dense gluten filled cake if the recipe was not originally made for gluten. XD Hope this helps.

I’ve baked several almond flour cakes but they didn’t rise as nicely as this one. Amazing cause you did not use a leavening agent. Or whisk the egg whites. Nice! And I love love love the lack of talking in order to hear the birds, the fire, the cutting. Lovely.

New sub... I especially love these cooking videos! This one was very interesting and I see how although making and using almond flour is possible, it was a lot of work. Blanching and removing the coating, but I can see it could be very easy to burn them getting to dry. And still need to grind them before even putting the cake together. Excellent job on it though! It's very useful information on how to do it with what's available.

Our neighbor was kind enough to plow our driveway during a recent snowstorm and I wanted to bake him some cookies or something to say thanks. I started obsessing over it and told my husband that these days it seems everyone is allergic to stuff like nuts and gluten and you really have to be careful when you bake something so you don't end up killing them with an allergic reaction or diabetic shock. Gone are the good old days when you wouldn't think twice about dropping off some walnut brownies full of gluten. LOL. Love your channel!!!

We are about a 20 minute journey from town (Ste. Genevieve Missouri and an hour from the nearest major city St Louis.

Such a relaxing video to watch. I love that this is a gluten free recipe! I have very similar bowls(and platters) to the ones you use in this video. I got mine from Portugal and Spain when we lived in southern Spain. I love how similar they are to yours, decorative interior and plain terracotta exterior. 😁

New sub... I especially love these cooking videos! This one was very interesting and I see how although making and using almond flour is possible, it was a lot of work. Blanching and removing the coating, but I can see it could be very easy to burn them getting to dry. And still need to grind them before even putting the cake together. Excellent job on it though! It's very useful information on how to do it with what's available.

I can't wait to try this recipe, gluten-free or not....it looks delicious!!! Going off on a slight tangent here: It's funny you point out it's gluten-free. Our neighbor was kind enough to plow our driveway during a recent snowstorm and I wanted to bake him some cookies or something to say thanks. I started obsessing over it and told my husband that these days it seems everyone is allergic to stuff like nuts and gluten and you really have to be careful when you bake something so you don't end up killing them with an allergic reaction or diabetic shock. Gone are the good old days when you wouldn't think twice about dropping off some walnut brownies full of gluten. LOL. Love your channel!!!

Do you mix by hand a lot...by choice...or was it more normal back in those days, for the working class folk? I love to bake, but the tactile feel of that would bother me for sure. Glad you knocked it out so easily.
