I must say I was surprised to see you fry the garlic first then add it to the sauce!
I'm from the Caribbean, Haiti to be exact, & some of us do the same with the garlic & add it to a bean sauce we eat with white rice.
It's always amazing to see how different cultures can have similarities.
Also when you were putting the tempura mix on the lobster, I had a flash in my mind to make some calamari this way.
