Can somebody explain to me, why he is showing the Dorian scale everytime? Its not that it sounds great or anything in my solos. I rather use the pentatonic/ blues scale. Why?
I'm no expert but here's what I think:
In the minor scale, you have:
1 2 b3 4 5 'b6' b7
In the dorian "scale", you have:
1 2 b3 4 5 '6' b7
In B, the major 6th interval that is targeted by the Dorian but not by the Aeolian (minor), adds a certain flavor to the scale. It's a minor scale with a raised (major) 6th.
This means you can play the minor pentatonic, with an added note: the major 6th. To show:

|-----------------7---9--------------------------------
|---------7---9---------------------------------------
|7--10-----------------------------------------------
There are a few reasons this M6 is used:
1. In the E7 Chord, the 3rd of the Chord is a G#. Relative to B, G# is, you guessed it, a Major 6th.
2. In the C#7 Chord, the 5th of the Chord is a G#. Relative to B, this is once again a major 6th.
3. If you listen to the track, there is a consistent fill where he's playing a Major 6th to a 5th.
If you need to hear it, play 9th fret on the B string then the 7th fret on the B string.
TL;DR: The chords and notes in the track include a G#, which is a major 6th, targeted by the Dorian scale but not the minor scale.
I only started learning about the modes and how to use pentatonics to target them a few months ago, but this is my best explanation of why it's Dorian rather than minor pentatonic. If you have any more questions, just ask.
Heres some extra notes as well:
There are actually many different pentatonic scales you can use over this track.
1. B Minor Pentatonic
Since the notes of the minor pentatonic are in the dorian scale (Root, b3, 4, 5, b7), you can feel free to play just the minor pentatonic or blues scale. It won't clash with the notes in the track. But if you want to add some flavor, use the Major 6th and the rest of the Dorian mode as well.
2. F# Minor Pentatonic
The track is in B Dorian. This means it's also in A Major but focusing on the B instead of the A. The relative minor of A Major is F# Minor, so you can play this as well.
3. C# Minor Pentatonic
As mentioned before, the "the" key of the track is A Major. If you use a pentatonic extending from the Major 3rd of this, you actually encounter a pentatonic scale that hits some of the notes of the full A Major scale. Specifically the Major 3rd, 5th, Major 6th, and Major 7th. This can give some interesting sounds.
On top of this, each Chord gives you some extra options. Here are a few for each:
Bm - B Dorian, B Minor Pentatonic, A Major Pentatonic, F Minor Pentatonic
E7 - Same as Bm, but also you can play the E Major Pentatonic (without the 7th) or even the E Minor Pentatonic. This can unlock some unique flavors but it can be hard to navigate. Check out Ross Campbell's lesson on playing the 12 Bar Blues for more on this.
F#(7#9) - This one is extremely interesting. The #9 is the same pitch as the minor 3rd of F#, except that F# has a major third. This means that, like with E7, a hybrid of the F# Major and F# Minor pentatonics can give extremely bluesy sounds.
G7 - Same as before, you can add the Major and Minor Pentatonics in on this Chord for bluesy sounds. Also, a Dm6 Chord holds Many of the same notes (G7 - G, B, D, F vs Dm6 - D, F, A, B) so you could try D Dorian but this may be hard to implement.
C#7 - C# Minor Pentatonic all the way. Don't forget, you can still use the B Dorian and B Minor Pentatonic, too.
For all of the Dominant 7th chords, you can also play the Mixolydian which directly targets the Major tonality with the minor 7th. So E Mix over E7, G Mix over G7, C# Mix over C7, etc.
