I have a feeling that PDU session will be slice specific in this case and not UE specific, which means UE1 will have two PDU sessions with respect to slice 1 and 2(At 56:00 minutes). Please clarify

Yes. One UE may have more than one pdu session. Even within a slice UE can have more than one PDU session.

One query ,can you please clarify .Suppose An operator has deployed 5G Network using option 5 (eLTE+5GC). will the subscriber of the operator need 5G enable device??

No. 4G devices will continue to work.
