    This was really a fun adventure. I had heard about this sourdough bakery being possibly the best in London so decided to investigate.
    It is easy to get to with a speedy ride on the District line to Whitechapel and then 4 stops on the DLR to Dalston Junction. Alternatively, take the Victoria Line to Highbury and Islington and then the DLR to Dalston Kingsland.
    This bakery and bakery school was set up by three people 8 years ago and now employs 80 people.
    They set it up in a container in Abbot Street and expanded from there. Pivotal to their early success was Yotam Ottolenghi’s decision to outsource his bread to what he considered to be the best small bakery in London. The rest is history being made!
    It is easy to see why he thought that. The bread has bounce, great crumb, good crust, but for me the really significant thing is the invitingly wet texture of the bread. This is down to the superlative quality of the Dusty Knuckle Starter. (My advice is go for the Potato sourdough - it was flying off the shelves!)
    So when you get there, close to the excellent Ridley Road Market founded in 1880, you will find a sun trap down the little road of Abbot Street where you can try out the bread , coffee and excellent sandwiches and a container with the bakery school behind. (I had a nice chat with one of the teachers who was filling an unforgiving minute by doing some menu creation work for the innovative lunches).
    Once inside the bakery, you will be enthused by the wonderful happy energy. An amazing selection of breads and rolls await!
    I just loved the staff too. Everyone from the charming co-founders Rebecca and Daisy downwards were just so delightfully passionate about producing the best bread. The positive atmosphere was a joy.
    I just could not believe that one of the staff on the secondary fermentation had worked in my favourite Restaurant in Brazil, Remanso do Bosque, in Belém do Pará, at the mouth of the Amazon! Quality is clearly a magnet!
    Although the third co-founder, Max, was away I was lucky enough to be shown around by his charming father Jeff and Daisy. Thank you so much Jeff and Daisy!
    So it is at moments like these that I wish I had 6 Pelham Peacocks in my larder to award! But do not hesitate, get down to the Dusty Knuckle right away and see for yourself! Bravo! 🦚🦚🦚🦚🦚+🦚!
