AAA is my host agency and I feel like I can’t get top dollar splitting my commission. I just signed on November 2019 so most of my clients ended up cancelling..... How do I get my own IATA number? Is it better to just stay with host because of fees and bookkeeping?

IATA has high sales quotos before they are eligible, so most aren't particularly this year. Here's the A: IATA requires you have a minimum sales to be eligible. You could consider starting with CLIA instead. AAA is a tough model to make top dollar under, I've worked with several in our Carers on Vacation program.
