    RE freezing stock or broth - Freeze it in ice cube trays! Then, once frozen, put the cubes in a freezer bag. The trays I use are 1 oz cubes so easy to measure and then you don't have to thaw them, just drop the cubes, pre-measured into your application.

      I do the same thing with the ice cube trays for herbed butters, freezing herbs that I use in soups and such. Saves on so much thawing.

    Before I can or preserve anything from the garden, I need to bottle up whatever it is that gives you so much energy. I know this is edited, but what you get done in a day is amazing and inspiring! If I 'had the house to myself', my first instinct is to put my feed up with a good book, lol...

    Something that a family friend from Julian, San Diego mentioned for me. Her family has been growing, canning, and preserving for bulk sale for generations. She mentioned that running the mason jars through the dishwasher sterilized the cans before use, this will expedite the process. She also mentioned that as long as the contents were boiling hot before inserting in the jar, you could essentially skip the water bath as long as you flip them upside down. The tops will create the pressurized seal and the heat will kill off anything that may also be inside.

    If you have JoAnn’s craft store, our always carries Ball Jars.. all shapes and sizes. They are always there because that’s the last place canning people check is a craft store…nothing food related there. :) I enjoy your videos. :)

    Just did the same in even the same roaster last week, yes it rained all week! I had a bowel infection a few years ago that really messed up my potassium levels and caused anemia. When I got home from the hospital, I drank a pint per day for 2 days. On the 3rd day I had to see the doc for another blood draw. Everything was normal and they were shocked and even more shocked when I told them what I used. One doc had never even heard of bone broth. Now I keep it on hand for just such things. I use just broth to cook and bone broth when someone gets sick. I use a quarter cup of apple cider vinegar to a full roaster as it really helps in leaching the nutrients from the bones. Theres a reason they keep a pot on the stove everyday in Norway during the winter. They are very healthy there.

    Woman, I need a bottle of whatever you're taking!! Watching your productivity and energy level is amazing, but watching it in FFW is down right mesmerizing! I remember having that kind of energy and focus -- And then 40 happened haha!!

    I love your channel Becky, watch it daily! I appreciate how you always focus on methods to be more healthy. On that note, and because I care, I wanted to let you know cooking right on foil is not a good idea. Aluminum leaches into the food and then into you. This is the first time I’ve seen you cook right on the foil so I had to let you know. Thank you for all your efforts to bring these great homesteading tasks that you share to all of us. I can and dehydrate a lot of food and love your channel!!

    Hi, Becky--Have you looked at Who Gives A Crap for toilet paper? Super responsible company, and super convenient--they deliver a big box to your door. They also do paper towels and tissues. Apologies if this is a repeat; I'm not connected to them, just a fan. I love how responsible they are, and how easy they make ordering.

    I love watching these videos - I don't think people do canning now in England - or at least I havn't heard that anybody does it much now. It reminds me of my dear nan who I remember when I was young about 60 yrs ago - she was a fanatic. She went through the 2nd world war and rationing and I think she thought she would stock up just in case rationing reared its ugly head again. Esther could feed dozens of people at the drop of a hat and provided a large table groaning with food in a flash. All of us grandchildren were dispatched upstairs to fetch countless tins and jars of food, she would boil galvanised buckets of beetroot and eggs on the cooker and there was a constant supply. Keep up the good work - I love watching.

    I always enjoy spending the day “with you!” Excited for your freeze dried broth! That is the number one thing I would want a freeze dryer for. I am trying to convert over to canning it but still have freezing as my main method. I usually put a few jars in the fridge at the beginning of the week so they are thawed when I am ready to use them.

    I enjoy watching your videos and have learned so much from your content. When I watched your video today, I thought, "she is such a wonderful homemaker!" I like that you consider the cost of things and work not to waste. I grocery shoped based on weekly sale papers when raising my kids. I didn't work outside the home--my husband was a public school teacher and was paid once a month. We loved the family lifestyle of him being a teacher, but had to make everything stretch. Eating out was a rare treat. It was a blessing in disguise to live frugally. I learned to cook and bake in the footsteps of the women in my family--so many phone calls to Mom and Grandma--so many wonderful food memories. I am now the older generation and am the one being called for recipes and I LOVE it! Thank you for your entheusiasm and keep up the good work!

    I was making green enchilada sauce Friday. I had cut up 40 cups of green tomatoes and 4 roasted Anaheim peppers. I started on the onions thankfully not the jalapemos. The knife stuck in this humongous onion from a local farm and when I tried to pull and then push down, it zipped forward and the onion rolled and my left middle finger was speared and sliced on the side. I had to wrap in paper towels as I saw ligaments and fatty tissue, I knew it meant a trip to the ER. Here I'm standing in my jammies with blood dripping through, so I put the two pots of veggies in the frig, slid on some shoes and drove to the ER in my jammies. It was only 1 to 1-1/2 inches long and required 3 stitches. I had church on Saturday and wasn't touching a knife on Sunday. Lol. The hospital gave me gloves and I finished on Monday - getting 9-1=2 quarts. Yippee! Still have to wait 6 more days to get stitches out.

    You can also blend tomatoes and freeze -dry and basically it's like tomato paste / thickner. Just a suggestion for the future. You can even make your salsa / sauce and freeze dry and rehydrate to make enchilada sauce when jars are scarce. Some some ideas!

    Back in the day we had a full sized upright, the parents had space freezer space more often than not, and Thanksgiving turkey coupons were not tied to dollar's worth of purchases - my goal was upto 12 of the biggest turkeys available. That resulted in one roast turkey per month and plenty of meals after. I also love roast turkey as a "company meal" because it doesn't take a lot of tending when slow roasted, smells good, looks impressive on a table, is reasonably fool proof, and can be stretched or not depending upon the sides; timing can be played with better than a lot of foods too. An amazing number of people are surprised with roasted turkey outside of a holiday too.

    Canning jars are back in all the stores here, stacks and stacks but, the lids are still hard to find. I've found a few boxes once a few weeks back. The stores use to only carry canning supplies during garden season then they'd clearance them and stock those shelves with other products, some stores still do that, some carry them year round (when available). I like to cut the meat off my turkeys (raw) and can it, then I make broth with the bones and can that, when I need freezer space. I still have a few bags of tomatoes that need to be thawed and canned. Always fun hanging out with you in the kitchen.

    Great video, Becky! I love that you freeze your veggie scraps for broth. I always put my scraps in chicken stock since it adds so much flavor and color. My aunt told me she always saves her leftover veggies from dinner every night. She puts them all in one freezer container for the whole week. At the end of the week she empties that container into a pot, adds meat and herbs to make soup. She grew up during the Great Depression so she learned not to waste anything.

    Check out hardware and feed stores for canning jars too. We've had decent luck with them when the grocery stores are out. I don't know why but I never thought of cooking a turkey in the roaster. I do make broth the same way. I have heard to add a it of vinegar to help extract more from the bones. You are so busy and productive and I'm jealous lol

      Thats where we got all our extra jars this year and even picked up 2 pressure cookers as well at our hardware store. Got an extra for myself and one for our son who could not find one anywhere!

    You mentioned a lot of tomato products come from overseas, I wanted to bring up that it is also often using slave labor. They get people from different countries and then take their passports and often refuse to pay them, or pay such minimal amounts they can’t leave. They live in horrible conditions and frequently work 16 hours+ per day. You can see documentaries on UA-cam about it. It was a huge motivation to me to can my own tomato products.

    Becky - I thought I was the only one who reused ziplock bags. I also reuse the wax bags that cereal and oatmeal com in.

    Places like farm and tractor often have canning supplies. I've had good luck with them.

    Consider getting a hand held spray attachment for your toilets. It saves so much toilet paper! They are inexpensive and easy to install. They are often marketed as diaper sprayers for cloth diapers. Have had ours a couple of years and love them!

    Those gamma bins are awesome. They hold up to 60lbs sugar, rice, and beans. Also good for dog food.

    I was really lucky with jars. The Amish store in Cheautea Oklahoma GAVE me three boxes of 12 pint jars. I was so excited!

    If you lay those bags of Turkey flat they'll be easier to stack in the freezer :) so glad your channel has grown so much so fast!!

    Love cooking an entire turkey for two people. We eat the white meat as turkey dinners & the dark meat goes into curries. It's so yum! Looking forward to seeing your hog 'haul' in a couple of weeks.

    one trick iv found for finding canning jars is make a little bit of a drive to an inner city walmart of grocery, ppl in the suburbs and rural areas tend to do more canning so the inner city stores r more likely to have jars. iv actually even found lids the last 2 times

    Bimart usually has some jars when I can't find them anywhere else. I am over on the west side, so I usually go to that one. 😉

    One of the best meals me and my family enjoy having with leftover turkey is open faced turkey sandwiches. Which is a slice of bread, topped with turkey and gravy. It's very delicious and a great way to help get those leftovers out of the freezer. 😁

    We love your videos! We recently bought a food saver and it has been a game changer for long term and freezer storage! We find that storing meat in the deep freezer seems to last much longer too without any ice crystals.

    Hey Becky!
    So turkey’s I was in the same situation turkey’s Take up a lot of space so here’s what I did with mine because I’ve done the roasting and then saving the meat but here’s another 💡 idea for you peice out the turkey like you would a chicken deboned (leg, thigh, breast wing)
    the breast freeze the whole breast (I use mine for turkey gravy)
    Debone the thigh and chunk up the meat
    roast the bones legs/ wings and innards make broth
    So I did 4 turkey’s
    8 breasts went back in freezer
    6 quarts 1.5lbs thigh scrap turkey -pressure canned
    And I am currently still working on broth figure probably be a dozen quarts of bone broth

    I'm in Poland and can't get a roaster like yours and I'm sooooo jealous 😭 the best I can do is a 8 quart crock pot and lemme tell you, that ain't enough for my 3 kids 😂 hahahaha

    I’ve found canning jars at Walmart, Target, Ace Hardware, Tractor Trailer Supply, Lowes, Harris Teeter (NC grocery), Publix, and a sprinkling on Facebook marketplace. I don’t remember if I saw some at Home Depot. Lowes only had regular mouth though, everywhere else had both wide and regular mouth. With Walmart, Target and Ace, you can buy online and pickup same day. So that way you don’t have to go inside to see if they are out of stock. I got many of my stockpile jars and lids this past January and February.
