Forget about it being safe. It's the fact that it's raw that is unnerving. I've had raw egg before and the flavor and texture is gross. Don't know how she can do it.
I've only had raw eggs in Norway (the flavor was fine to me) and the texture definitely is... something. I like the texture of a raw yolk (sunny side up fried eggs!), but the slimy stickiness of raw egg whites is a bit too much for me. That stringy, gooey texture is quite popular in Japan, though (raw eggs, natto, yamaimo), so it's probably a cultural thing.
