    Terrific. Thanks. Long after we've had an oven (for both bread & pizza) I'm just going through vids now for tips and tricks. I've used a mop to clean but like your using peel & wet rag better! Also, looks like most folks have fire to side -- another good hint! I've always had it in back but will try side now. But, I like the floor a little hotter for a crisper crust then, at the end, raise the pizza to dome for ~10 seconds or so to crisp it up and get even melting to cheese. Thanks again!

    thank you. I had not seen how all these brick oven build videos actually make a fire and cook a pizza! You clearly show key things. I have 2500 bricks that used to be a brick making kiln. once the temp here gets above -34 C I will build an oven. Wife is from taranto italy and misses the brick pizza ovens. Thank you again.

    Awesome video!!! Just something I learnt from another pizza chef is when you turn the pizza bring it out the oven to the front turn then place back on same stone. But great video sir thanks!!

      If you're a terrible cook, I'd say try the oven out before the party, not try it during the party. Can take some figuring out how to hit right temps and making a good pizza. Don't let your guests walk away saying your pizza party was a shambles. 😄

    Thank you, I learn couples of points. 1. start the fire from 1 size to heat up, then move to another size. 2. Pre-heat the wood for cook pizza. 3. Leave the pizza staying for the original place you put in.

    Hey thanks to this video we have amazing first pizza day in our new oven we follow your steps amd all came to plan . I think is important to mentioned that the oven provably will be good idea to cure it before using it for first time by light fire 2 or 3 times at not extremely hot temp. We notice that took really long to get white dome however the weather was really low here in the uk so the conclusion is if you using the oven in the winter provably need start the fire 4 hours on advance if is summer 2 hours like this video . Thanks a lot 👍👍👍

      Yes you are correct, it doesnt get that cold in Australia but a good point if the oven hasnt ben used for a long time.

    Really great video!! I've just completed my oven. Watched lots of how to build it but none on how to cook a pizza in it. First night I used it invited the whole family over. Pizzas was a disaster. But, everyone still had great fun! You just taught me all the mistakes I made! Can't wait till Friday night to have another go at it! Thanks again!!

      I remember when I did that. Nothing went right for me, i had about 10 people over & ended up buying pizza, lol. Honestly, it took me about 20 pizza's before I got everything to pizzeria quality. Now, people that come over ask "you gonna make pizza, right".

      Same my son had a party with his mates and I didnt get it hot enough, and didn't flour the pizza peel enough and pizzas ended up a mess in the oven! A few more attempts and all 👍. Great helpful video

    Just picked myself up a pizza oven from Bunnings for 1000 bucks. I’ve cooked four pizzas in there and have all taste better than your average franchise shop down the street. I have always had my flames to the back, but it makes much more sense having the flames on either side, and I’ve learnt that when it’s ready to cook the dough more then go white. Keen to try this this evening

      It’s more important to get the floor temp up near 400c and then have a nice big flame. Enjoy

    Awesome tutorial and that's exactly how its done! Considering that i'm always busy and pressured for time I rarely use my brick oven and I bought a metal pizza oven. The pizza results are identical to the brick oven thats fueled with wood or coal (even brick oven pizzerias will use wood or coal for show and get the fast heat from gas). The oven i have is called Pizza Party and its made in Firenze Italy. The oven is built well and it can be used with either wood or propane and used for home or small commercial business. I always use propane because the oven reaches cooking temperature in about 20 minutes and there is no soot to clean. The oven is used a lot and it looks brand new. Iv'e also realized that pizza doesn't know the difference whether its fueled on wood or gas and that's why the taste is identical to wood or coal fired fuel. Pizza is cooked in under 2 minutes at 900F. The only way wood or charcoal would make a difference is when cooking foods at medium/low temperature at slow speeds.

      Yes I agree the stainless steel ovens are excellent and use a lot less wood. I sell Alfa ovens but I’ll look up pizza party ovens.

    Quick question I noticed you have a covering behind your pizza oven, is it ok for the pizza oven to be under a roof and has a covering behind it?
    I'm wondering about the smoke that comes out from its chimney. I just bought a movable outdoor pizza oven and I'm trying to figure out where to station it in my backyard. Of course I want it under our patio roof so if the sun is out and hot I have some shade. Would it be ok?

      Hi, you will get smoke, how much depends on how dry the wood is. Maybe set it up near the end of your patio roof so the smoke gets away easily. The chimney on mine is extended through the roof so I don’t have smoke problems. I hope that helps.

    Great video! I used the technique of moving the timbers from one side to another but I have been having difficulty getting the bottom of the pizza cooked thoroughly. Any suggestions are appreciated. Thank you!

      Hi Paul, you should get an infrared thermometer and check the floor is at 400 Celsius and the timber has a flame. This will ensure you get an even cook in 90 seconds. If your floor doesn't heat up to 400 Celsius, you might have poor quality floor tiles. Some Chinese made floor tiles don't heat up or recover very well. I hope this helps.

    Thank you Roberta. We just found you after buying a clay oven last weekend and having such a disaster so now we are excited to give it another go tonight. What was the implement you had the pizza on when you put it in the oven, it slid straight off of it. One of our problems was actually getting the pizza off the paddle but part of that was having too much topping.

      Hi, I use a perforated aluminum pizza peel so you can use plenty of flour or semolina when making the pizza and then shake it all off before putting the pizza into the oven (the flour will fall through the holes in the peel).

      Hi Marcel, when you're done spread the hot coals over the floor where there are stains etc. and leave the door off until the wood burns out. This will help clean the floor and you can then use a wire brush while the floor is still hot if required.

    Great video thanks. I note you have very little smoke coming out the front, do you have a rear flew? (I can see a stainless pipe in the back of the video, but unsure if this is a post of your patio. Also, if starting from a cold oven (25 °C as I’m in Cairns) how long should I burn the first stage for before moving the fire. Kind Regards Leon

      Hi, the flue is at the front of the oven on the outside of the dome. Stack the fire in the middle until it burns down, maybe 1 hour before you move it to the side. I hope that helps.

      Hi and thanks. The peel I was using you cant get anymore but the Chinese made anodised aluminium perforated peels are very good and you can find them online. The italian made GiMetal and Regina tools are top quality but very expensive.

      Hi, calcium silicate board underneath and ceramic fibre blanket over the top. 50mm of each.

      Hi, after you have cured and sealed the oven, build a good hot fire on the floor and then spread the coals. This will help clean the floor, then push the fire aside and clean the floor with a damp cloth like I do in the video. I always use raw dough cooked on the floor. Enjoy.
