I have so many jars of canned food on my shelf, that I haven’t touched since starting my keto journey, simply because I just didn’t know how to make them low-carb. I can’t thank you enough. Please, please please continue showing how you create your low-carb meals using your pantry foods, after the pantry challenge has finished ?????? Also I thought I’d share our weather here in Australia.. we have a beautiful cool day today, but last week was up around 38°, then the temperature starts to rise to around 38° again all weekend…. (Around 100 Fahrenheit). I’m looking forward to Autumn..

I don’t know how you can pick a favorite either! All of those dishes look fantastic! I agree with your comments on keto meatloaf, it’s really hard to get the texture to the same consistency as traditional meatloaf. Thank you for sharing your meal inspiration!
So nice to see you Carter. I love meatloaf, to mine I add red and yellow peppers gives it a sweetness. I also form it into the loaf pan but invert onto a parchment paper lined sheet. This way the fat drains away from the loaf. Tonight I am making butternut squash marscapone ravioli with browned butter and sage/pint nuts (they are a treat tonight as I paid 8.00 for a cup!!) It is chilly here in Vancouver but the sun is shining. Just love it. Cheers
Everything looked so good! I haven't made salmon patties in a long time! I need to! But, I only have canned from the store, which will do the trick. That mac and cheese looked wonderful and apparently the "cheese nibbler" thought so, too! I've made some soup and red beans and rice this week during this cold, snowy Mississippi weather (we don't get to say thst very often!). Thanks for sharing!

Pulled pork with mac and cheese plate looked delicious. Yum Butter Pecan anything is fine by me. Love a good meatloaf and salmon patties. Micro greens amazing. Store bought tomatoes not good. I sliced, seasoned and broiled until hot and bubbly. Better. Have a great week. It has been in the low 20's at night high 45 today. Still Burrrrr to me. Stay warm and have a great week.

Marinate raw veggies including those tomatoes, peppers, mushrooms, quartered onions, GRILL it as a side. I use olive oil and balsamic vinegar as a marinade. Good use and added flavor to the veggies.

Absolutely. I am so excited about these noodles. They're not cheap, but they are such a welcome addition! amzn.to/4gbRRTk I have now tried the elbows, the penne and the spaghetti. The elbows and penne are just like regular noodles. The spaghetti noodles tend to stay more al dente than regular noodles, but that still works for me. Hope you love them!

Hi Carter! I'm going to have to make some of your tomato jam and that maple onion. Yummm everything looks great! Be home tomorrow night yay!! We made a new recipe! Smoked some mozzarella cheese and added that to cooked ital sausage. Made 420 raviolis for the freezer. Also my son wanted enchiladas, so we cooked some thighs in the instant pot with taco sauce! He made a delicious homemade sauce as well as smoked a block of cheddar cheese. So I filled the dipped corn tortillas with the chicken and the cheese, rolled them up and topped them with his sauce, very delicious! We ate 6 of them for dinner and froze two more trays of 6 ea. he will Have plenty of food to eat while I'm gone

I use the Bettergood Keto bread (from Walmart) and dehydrate the loaf in my dehydrater. I make italian breadcrumbs out of the loaf and have it for breaded venison or meatloafs. It's, actually, one of the better tasting breads I've found and the sliced are the same size as regular bread.
Carter! These dinners are now on my “to make” list! But also tomato jam - I’m not a fan of ketchup either-and maple onion jam! Allergies to gluten will keep my meatloaf a tad higher carb (using GF bread crumbs).. cauliflower mash is a fantastic substitute for potatoes.. I add bacon bits to mine as well.. that’s how I convince hubby to eat it ! Where did you find that cutting board? thanks again! Beautiful! Stay warm!

@growandpreserve you should it's simple Boil milk as it starts to boil turn of the stove and let it cool for 5 to 10 mins and then add lemon juice or vinegar mix and let it set for 5 mins after it curdles strain in cheese cloth and squeeze some liquid from it then wrapit tightly in the cheese cloth put something heavy on it so the the remaining liquid can drain for 30 to 45 mins then you can open it and it's ready if you are not going to use then it's best to refrigerate it remember to keep it submerged in water
I canned potato wedges and chunck and they turned brown...what did I do wrong? I didn't have citric acid, so I used lemon juice. could that have been the reason?
I would guess it may have been the age of the potatoes. The older they are (since they were harvested), the more likely they are to turn brown or gray.
