I'm not sold on attempting to compare DOOM and GoldenEye - there's a four year gap between the two, with GoldenEye releasing between Quake and Quake 2, closer to the latter. DOOM is/was the definitive FPS - the one that made it a genre - and codified the standard FPS deathmatch. GoldenEye was the game that brought FPSes to consoles, scoring over DOOM in story, and in having split-screen deathmatch on a single machine. I'd say that DOOM was the best at what it did (though you could make an argument for Quake beating it in some ways) but GoldenEye was the best at what it did, and the two were just different enough that it's reasonable to prefer either over the other.
Sadly GZ Doom doesn't work with this collection and it's not something a non PC person would really fool around with. I do like chapters two thru four far better than the first chapter but they are harder and more maze like for sure. But for my book that gives them more replay value. Of course getting the secrets helps a lot. Getting the BFG would have helped Lore quite a bit as would getting better weapons earlier. The fact that you don't need to though shows how good this game is. Plus playing the PS1 version so much back in the day, without a mouse I might add,means the secrets are burned into my brain. I go for a lot of them without even realizing it. Plus whenever I think of Doom I always think of the PS1 music which does make the game more moody for sure. And since I've always played Doom on console the best ways to play would be on the Xbox series X or even the PS1 if you want to go back.
