When we grew up there was no such thing as carrots 🥕 or corn 🌽 in any Chinese restaurant’s fried rice. Just another classic old school food item taken away from everyone. Yes I’m aware in Thai food they put carrot and even tomato and pineapple in the rice. I miss the old school awesome fried rice !!!!!

If you’re looking for Chinese fried rice I reckon those are best at high end Chinese restaurants rather than local takeaway, however the best fried rice in my opinion are Thai restaurants

I love these little suburban dirty Chinese joints and glad this one survived the pandemic as they’re been an institution since I was a pup in Richmond Road near Morningside train station… Nothing better then a solid special fry rye and I’d just add a bit more soy for my serving…. Pity they’ve gone to bamboo scoopas though… Replace the fish ‘n chip hunt as you’ve found the best with this search comparing container size, cost and outcome I wreck. Some says is Nasty Goreng....but that’s if you’re on a budget living off the street vendors in Bali and doing rice every day for breakfast lunch and dinner! Zucchini in a SFR? Greggo, you are funny. A bit of chicken or Chinese sausage would have made it real special. That smell comes from the wok. called wok hai, or breath of the dragon, if you smell that, it is authentic.
My local chinese shop doesn’t do a good fried rice. The rice isn’t soft, its more like stale or just old unfortunately. I can’t seem to find a fried rice like I remember 20 odd years ago.
The Chinese restaurant starter pack: tucked away in a strip mall some lucky figurine or lucky bamboo on the front counter surprisingly large menu, it's not unusual to see over 100 items the washroom is kinda grimy, perhaps a lingering smell of disinfectant fortune cookies (in my experience the authentic ones give them out too) Also a tip for gauging if a Chinese restaurant is actually good/authentic is by seeing if there are a significant portion of patrons that are Chinese, we know where the real good food is.
You should try making Nasi Goreng Greggo! It’s a indonesian/Dutch fried rice. Traditionally it has bacon in it but beef is great too. A brand called Conimex makes a seasoning mix for it.

I'm Indonesian and the majority of nasi goreng in Indonesia does not contain bacon. This is because Indonesia is a predominantly Muslim country and pork is forbidden in Islam. The most common meat is chicken, though in many cases they will omit the meat and just use eggs. Although some bacun would probably taste amazing in it too :)

The rice looks very wet. Never heard of bacon before in special fried rice or carrots, especially large slices. Looks to be a tiny amount of egg in it too. The rice also looks too white too due to the lack of egg.
I am wondering why you don't bring your favourite cutlery from home. That wooden spoon didn't look like much chop. Oh a arrgghh, I hate trying to eat icecream with a wooden spoon, there is something about the texture that is wrong.

There are some great video's from our own Adam Liaw on how to make egg fried rice in a number of manifestations, and, of course, Uncle Roger gives us a whole bunch of recipe reviews from top chefs world wide that he failed miserably, especially Jamie Olive Oil. We could write a book on egg fried rice. My favourite is simply egg, garlic, ginger and rice with a fresh Spring Onion garnish at the end, served with some BBQ'd Char Sui pork - most Chinese barbecues have it, and the rice. MSG is salt on steroids, highly recommend you go to an asian shop and buy a big bag of the stuff. I add it to literally every savoury meal I make.
