I'm not sure that I'd want to bother with this particular method, but I have recently gotten into cold-brewing and it does make a significant difference in flavor. There are lots of comments here about over-complicating coffee, it takes too long, dang hipsters, etc. which seem unnecessary. If you want to try cold-brewed coffee just throw some grounds into water and wait a day. Obviously this method is cheaper than buying this large contraption. You might like it! There are many ways to enjoy coffee, so why limit yourself?
We recently started doing cold brew - and I got tired of filtering out the grounds so I bought a nut milk bag (I know, I know, but that is what they are called) which looks like a large tea leaf bag. I throw 4 oz fresh ground coffee (fine) in per 1 liter of water, with a little extra for the soak into the beans. I "brew" for 24 hours, then drain into 1 liter carafes. Its great! Served with 1/2 cup milk with 1/2 cup coffee. Great hot or cold.
You're right: it is a matter of preference, but try starting with a 1:11 ratio of coffee to water. For a liter of water, that'd be about 90 grams of coffee. 1:15 is a standard ratio for hot coffee and we find that it helps to go a bit stronger when it's cold-brewed.
I have some friends that do cold brew at their shop, but they use a toddy (sp?). It works great, tastes great. When it's gone, it's gone. It is obviously not their only brewing method, but they offer it and it sells.
My Dutch Grandparents used a simple 2 stage filter system that was perfected over 300 years ago,it is was a common method back when in slow and simple times.

Beautiful contraption! However its beautiful form appears to be flawed by "pour function". The water dripping on top will find a path of least resistance through the ground coffee and not evenly extract during this process wasting coffee (this would be true even with inclusion of water diffuser on top - simply look at the tamp function and diffuser process of espresso extraction). If the coffee grounds container were made to be very narrow, I think the process would be much improved or simply soak the beans for the whole extraction time (typical simple cold-process method). Really cool looking though!!

This is way off. You are doing a massive disservice to anyone who owns this.. I have one and have had it for 3 years use it 3 days a week. not enough Ice, this is room temp brew. I can see the color of your coffee is pale. it should be 2x as dark and rich. the drip take the path of least resistance duhhhhhh... you need to spray each layer of coffee you spoon with a squirt bottle to make sure the drip just doesn't go through the center.. you are wasting all the coffee. if you are going to post a video get it right. thanks.
Jack Callie - lol that's the first thing I noticed was the lack of any amount of ice. The cold brewer I have you use all ice and a quarter cup of water poured over the ice to start it. The melting ice pretty much dictates the time it takes to brew. Average around 4hrs. Longer brew times can be had by putting it in the fridge. Up to 18hrs to brew! Unlike this design, I don't have to spray my grounds. Mine doesn't drip down the center. It evenly spreads the melting ice water over the grounds via a top sieve. Also mine has a filter not on top of the grounds but on the bottom of the grounds. It makes for a very clear cup of cold brew coffee. And a cover for the opening where you put the ice. It keeps dust and dirt out while it brews. Which the one in the video doesn't have. This one looks interesting but it doesn't seem well thought out.
Yes. You just put the paper coffee filters in the "coffee holder" and change when needed! I recently found out about it and I'm trying to find someone who is currently doing it so I can learn from their "trial and error." lol
Have you tried coffee from a cold brew tower before, Rich? You may actually find that you like it! If it made the same cup of coffee as any brewer, we wouldn't sell it - it's too expensive! But it really does produce different flavors entirely. And some people really enjoy the result. You are onto something about efficiency and price, though. We find that these brewers are most suitable for cafes, which have personnel to monitor these brewers and the capital to afford them.

Wouldn't a smaller diameter coffee holder actually let more of the coffee soak in the water rather than just the center portion? Might could use less coffee too /shrug, just wondering
Good question, decifal. There's actually a paper "filter" that sits atop the coffee in order to more evenly distribute the water. We find that the coffee saturates pretty evenly. As far as making less coffee goes... well, who wants less? ;)
My eyes just rolled so far back in my head that i saw the inside of my skull. I mean... seriously, the little condenser (spiral) line does nothing, it just looks fancy... If it's the temperature that stops the tannins, then just dump the coffee in the cold water, then filter it in 3 hours...
No No stop. First off the relationship between change in temperature to the coefficient of thermal expansion is non linear, and dependent on the surface area, and specific heat. Without getting to involved with heat transfer, the spiral thing idc what baristas call it provides a smaller surface area for the coffee as it condenses the water around the spiral thing. Water's specific heat is much greater than air. Therefore absorbing more heat,and maintaining cooler temperatures for longer. As it spirals down, it ensures all the coffee is evenly cooled removing any heat it might have gained from the ambient air, even when the water left over in the top reservoir is room temp. Like air conditioning coils. Then again I like hot coffee..........
So a dropping funnel fed to a buchner funnel filled with coffee (and probably a filter) fed to a big boiling flask for ( aesthetic purposes).. there you go guys just saved you a few hundred bucks

Cold brew cuts back acidity, the "bite" that that so coffees have, and IMHO it removes more of the nuanced tones (stone fruit/ lemon zest, etc)and leaves more sweet/chocolate/nutty tones.
Good questions, Zahi. We recommend filling the top chamber with both and ice and water so that the brewing water actually does stay cool the entire time. Regarding your siphon recommendation, I'm having some difficulty picturing that. Would you elaborate? Finally, you're right: that tube does absolutely nothing! But doesn't it look cool? ;)
All the gear, no idea. To get the full flavour of cold brew takes 12 to 24 hours. This 3 hour is a rush. Brewer looks fabulous and in my opinion would work better if the top section was filled with coffee and water and kept closed for 12 to 24 hours, then opened. I may well buy one as it looks better than my present set up.
hmmm seems like a long wait and a lot of unnecessary work to make a pot of coffee. i think i might stick with the heated method but it is cool to see. aesthetic wise it looks like something a chemist would use
+Rachmad Satria Because hot water releases oils and acid to make that bitter coffee taste. Cold water can not release these oils and acid = no bitterness and a different taste. Not better or worse different.

why not just cold press the fruit for the oil, then remove the sugars. finally buy caffeine pills from the store and add to said mixture? people over think coffee, suck the pleasure out of it.

You could also make the water flow upwards. This eliminates preferential flow, but makes the device more complicated.

I find the grinds do not get an even soak. Half the grinds are still dry. The clean up is also very difficult.
This contraption is also good if you're an evil scientist.
Just pop it in, let it drip, and in just 3 quick hours you'll have a cup of diluted coffee at room temperature.

This looks great, however I have a lot of difficulty of seeing this applied to a commercial setting. Waiting 5-8 hours for a brew is a long time.
