It's cuttlefish, not a vegetable. Kinda like squid. Regarding the oil, that depends. Lard or tallow (pig or cow fat) are great choices. Vegetable or seed oils, particularly canola oil, not so much.

I don’t agree. Keeping it a whole piece help keep the needed amount of moisture in squid meat. If cut too thin it will get too chewy
