In the original 3-4 hour cut of the movie Anakin's lightsaber was going to be red by the time he goes to mustafar.
A lot of the portions for this level must've been made when revenge of the sith was still in development or at its end stages before they decided what to do for the fight itself.
There were development animatics made by ilm given to george to see what George wanted to go for with the mustafar segment of the movie and that's where alot of the inconsistencies with the final product of the movie in comparison to the Lego games depiction.
You can find these animatics on UA-cam, they're pretty interesting.

This game came out years after. The Lego Star Wars 1 game was a few years after the prequels and features only prequel content. This game is the sequel to the first lego game and this once features only the Original Trilogy content, with a few bonuses such as this mission.

In Free Play Mode, would your team of characters be limited to the Original Trilogy characters even when your playing this prequel level or would the computer randomly select prequel characters in the PSP version because they are unlocked by Challenges and prequel bonus boss levels and not by some Extra importing LSW1 save data to the character selection screen?
