when sanding the bevel of the knife, using a piece of wood like his, a retangular one, your sandpaper will likely start to hit the wood too. so you either have the blade past the wood, or you taper the wood to somewhat of a point
You lost me when you said, “Sand for 20 minutes.” And then you gained a subscriber with, “Which turns into an hour and a half.” I’m not convinced on the don’t stab yourself part. My research suggests that is an integral part of the experience. Cheers!

Why have the tip of the knife extend past the timber improbable to stab yourself if you think about it

Very easy to injure yourself. Others have cut tendons or worse with the blade extending past the wood support. Stay safe!
