Crafting Traditional Mead From Harvested Honey

We decided to go super basic with this brew using only the honey we harvested from our bees. We actually started this brew back in October 2022 but were not able to record creating it at that time. We re-racked it a month later during the holidays and this brew has been sitting in its conditioning phase since. Its our first time trying this brew that's been highly experimental.
Recipe
3lbs Honey about 1.4kg (Fall Harvest 2022)
1tsp or 5ml Yeast Nutrient
1 packet Lavin 71B
1.5g Fermaid O
