I was fortunate to experience Clover Hill in August with my daughter on her birthday - it was absolutely amazing and Mr. Mitchell (and his team) deserve all the accolades they've received.

Started out in fine dining & served a black couple on a date. Told the guy that the steak dinner (filet mignon) he was ordering wasn't prepared like he was thinking (it was a super small portion w/eatable flowers) and suggested the prime rib w/all the fixings but he still ordered that filet mignon dish & when it arrived he was looked at funny and said, "I'm a man. What's this? Where's the rest of the steak." Right. I told the cooks and the chef and they laughed. We took good care of him and gave him the MANLY STEAK 😁

You could have just stated you served a couple. You can try it-just replace “black couple” with Interracial couple, or gay couple, or older couple, or Hispanic couple…you get the point, yeah..? Also, most people who have ordered a steak at a restaurant, I think, have done so by size-whatever the cut. A 12oz Porterhouse, a 9oz strip, a 6oz filet, etc…If the portion size is not indicated on the menu, you can simply tell the customer the weight and that should greatly reduce (if not eliminate) the take-backs for that reason.
"Why so small portions?" Answer: When you fine dine, you want to TASTE AS MUCH AS POSSIBLE and absorb the experience of quality while taking in a lot of quantity, so your not so full from 1 dish.
The portions are small because there are 12 courses; you have to pace yourself. Smaller portions allow you to taste more and that’s what fine dining is all about.
The wisdom he exudes at such a young age is something I want a piece of. I downloaded a version of that tattoo as further inspiration! He is doing n excellent job! ⭐⭐⭐⭐⭐
