My father, who is from Harlem, would tell me stories of being stationed in the Deep South with the Army, and even while traveling in uniform, he had to sit in the back of the bus, and couldn’t eat in restaurants….. So, in order to overcome this, black folk had to pack their own food and bring it with them. They usually used a shoe box to carry their food in, which is where the term “Box Lunch” came from, and among other things, there was a piece of fried chicken in there because it could remain edible for longer periods of time without refrigeration. As a teenager, my grandmother, who was from South Carolina, sent my father and his brother to spend the summer with her father in South Carolina. He was a farmer, and didn’t own a car. When he had to go to town for whatever reason, it was by horse and wagon, and it was an all day event. Since this was the South, and a good 10 years before my father was drafted into the Army, you knowwwwww they didn’t let black folk in their restaurants….. To remedy this, my father said that his grandfather would bring 2 watermelons with them. That was for something to eat and drink going, and something to eat and drink on the way back…… And this is how I was taught the connection between black folk with fried chicken and watermelon, straight from someone who actually lived it!!!!!

My mom would buy a whole bird, cut up, and plop the whole thing in the pressure cooker. Ham was a treat. We had that at Easter. Theses days you'll spend $4 a pound for chicken breast, on sale. A ham will run maybe $2 a pound. And wings! Chicken wings used to be something the butcher would either throw out or give away. Nobody wanted them. Then Buffalo wings swept the nation. Now it's like they're their own food group. Vegetables, grains, dairy, meat, wings. Crazy times.:)

Theses days you'll spend $4 a pound for chicken breast, on sale. A ham will run maybe $2 a pound. And wings! Chicken wings used to be something the butcher would either throw out or give away. Nobody wanted them. Then Buffalo wings swept the nation. Now it's like they're their own food group. Vegetables, grains, dairy, meat, wings. Crazy times.:)
