Yes pickles are cucumbers. They are a specific kind of cucumber that is grown specifically to be made into pickles, some are for sweet pickles, as in bread and butter pickles, or sweet gherkins, sweet relish, and others are for more sour pickles. They all have that crunch because they are NOT cooked. They are cut up, soaked in water with vinegar, salt and herbs for flavoring, for at least overnight, and then placed into jars with some of the herbed water to fill the empty spaces in between the cucumber pieces. The jars are then placed into a container which gets filled up with water up to about an inch above the top of the jar lids. It is brought to a boil to make the lids seal. Then they get labels put on them and they're done.
HOWEVER, not ALL pickles are cucumbers. You can have pickled beets, pickled yellow beans that are flavored with mustard and are very yummy, pickled onions, etc. I guess you can pickle pretty much any vegetable if you want to.
