Same, I made roast beef. I am trying to psych myself up for a redemption try. I need a better rub, and I need to figure out bark, I am failing at getting bark at low and slow, might try hot and fast once the weather in the north stabilizes a bit.

How is your drum holding up with color paint? Do you cover it? Considering order but don’t want something that will chip or fade. I have the PBC but it’s dipped in porcelain enamel so well protected.
I also noticed, your drum did not flare up when you had the lid off so long. Mine started flaring up so bad, the flames were tipping on the top grate for a moment...too much coal?....I was not able to keep the lid off as you did to work the meat...
Just tried my new GateWay this weekend and looks like I'll need to do a "redemption" also....my temps flared to over 500. Can you give a setup of your smoker i.e. how much lump coal, wood? I also noticed you had a diffuser plate in the bottom...thanks!
Oh yes Joe. That turned out delicious lookin for sure. Nice comparison cook between the two barrel smokers. Burnt Ends looked awesome. When you stuck that one up to the camera I wanted to bite it. lol Very nice cook bro. I can tell you have worked a rub shaker plenty of times before. lol
Hey David, you'll maybe use 7 lbs of charcoal. I normally only fill up the basket half way and throw 6 chunks of lump wood and that does it. I've cooked for 5 hours on a half basket and left the vents set and the temperature held steady for at least 8 hours. 👍🏼

Nice brisket. I like how you break the cooking process down. I'm curious do you think a bunch of Gateway can work in a bbq restaurant or is it better just for competition and backyards
Troy Z it will work but you would need several drums. Now for ribs, you could get away with just one. I recently cooked 6 racks on my drum and I could of easily fit 12 racks by hanging them. Thanks for watching. 👍🏽
Easy Bake BBQ yes sir. The temp would swing between 325 to 350. The initial temp was 450ish and that's what you want to sear the brisket for first 5 to 10 minutes. Thanks for watching! 👍🏽

Looks great! I’ve used a lot of Heath’s rubs and love the pecan. Never thought of using it on a brisket. Definitely going to try that out. Thanks!

Drums are holding up well. I keep them covered and clean. I know PBC is coming up with a full size drum very soon. I would wait for it. 👍🏼

Probably too much charcoal but I also used the heat defuser plate.
Try closing your intakes, maybe that'll help prevent the flare ups.

ERIC MORENO lol! Only advise is stay close to your smoker and try to keep it at 350 to 375. 👍🏽🏈🏈
