Put een the coconut milk, the pigeon peas (gungo peas) the pumpkin and carrots, the lil Maggi cube, the hot pepper (i leave this out) and u have a meal fit for a king. Serve with some Avocado slices, coleslaw or green salad and yuh business fix. Chris is a real sweet han Trini...Caribbean unity all the way.

This looks wonderful! I cooked your famous Ultimate Caribbean Chicken Soup tonight and this recipe reminds me in some ways of your technique for making the chicken soup, only you add brown rice instead of vegetables. Thanks for sharing this.

Andrea Gustinetti i will answer for Chris. Using molasses is not the traditional Trinbagonian way. The sugar must be browned to caramellization not burned. Molasses has a strong distinctive taste which most Trinis would not want in their Pelau but if u want to try it go right ahead. We use molasses for our local sweets especially "toolum" which is made with grated coconut and molasses.

I make hot sauces and marinades at home. Turning flavors with different sweeteners is under appreciated in my opinion! Good idea there!
