I've been struggling for 5 years to make injera and I'm happy to say I finally succeeded! Thanks to your recipe! Thank you so much❤️❤️❤️ i didn't have a starter, I left it for 3 days instead of 2,as the creator of this video recommended. I followed every single step as mentioned in the video plus I've let the absit cool completly before combining it with the rest of the dough (because in my previous attempt I mixed it in when it was too hot and the fermentation got destroyed...)

@@dan-d6s9d I haven't baked enjera for a while now but if I do I follow the procedure Edy kichen gave. I used plain brown 100% Teff it says meskel Ethiopian Teff. I bought it from Eritrean/Ethiopian grocery. I don't add anything else. Hope it helps 🙏

In California, I made a slight adjustment, unsure if it’s the location. - I mixed 2 cups of Teff flour with 1.5 liters of lukewarm water for my starter. I left it covered in a dark place for 3 days without feeding it.

Hi Sophie, two days of fermentation without a starter is not enough. The dough needs to ferment properly first. If you mix the absit with a fresh dough first like i did, that will cool the absit down a bit before mixing it with the fermented dough so it won’t destroy the yeast. If you are adding the absit directly into the fermented dough you will need to cool it first. Also, after adding the absit if you leave it for too long you will see the water on top. This method worked for a lot if ppl so follow the exact step to start with. Look at my other videos for other ways of making injera.
I concur!! From start to finish with exact measurements, time, & so forth. Looks too intimidating with all the steps in different videos, but she has the best and most thorough instructions so far compared to others.

Yes you can keep it in the fridge and use it as a starter for next time. It will take you 3-5 days to make it without starter. 💖🙏
