Yum! Tip: leave the piece of fat in the pan as the steak sears. As the fat continues to render, it will give the “melting” liquid fat more flavor which the steak will absorb. (Especially delicious with an expensive cut like this one!!)
@@contentdeleted4978 as someone who is a Sous Chef and been working in restaurants for 13 years of my life, you my good sir do now know what YOU are talking about cause Francesco is absolutely correct
For those saying the steak is way too under: there's a good reason for that. This is a thin-cut piece of Wagyu, meaning that cooking it until it is medium rare or higher is going to just cause all that fat to disappear - which defeats the point of getting Wagyu in the first place. That massive fat content also makes it pretty much just melt in your mouth and so it doesn't really have the same texture as your average Rare steak would have. By slicing it thin, you further take away any resistance it would have to your bite and the end result is pretty much ideal. Coming from someone who generally likes their meat medium-rare; wagyu is usually better off eaten rare or even blue-rare with a nice sear.
Yea try telling that to wagyu specialist chefs in Japan who cut wagyu into small cubes. All the reasons you stated are exactly the opposite of the point you're trying to make. Wagyu is cooked to almost medium precisely because it has such high fat content that it actually brings out more flavour by melting more of the fat when cooked to almost medium.
I think that you don't necessarily need a thermometer to get a crust Thermomethers are supposed to measure the internal temperature of meat, not the outside? XD
Put the heat on medium high, wait for your oil/fat to smoke and put the steak on. Salt helps dry out the surface which helps form the crust. Don't flip too early and make sure the steak is room temp before cooking. Simple really

@@zackC171 nahhhh salt is 100% essential seasoning for a steak wym Salt, pepper & garlic powder are pretty much the go-to trio but wagyu is so flavourful you only really want to have salt
If she wanted to actually taste it she should’ve put way more. A ton of the seasoning you put on gets cooked off in the pan, it can almost never be over seasoned.
If you cook wagyu any more than that satan has a special place in hell for you. Under exaggerating of course because what really gets you a special spot in hell is thinking of cooking it more than that.
@@Unknown_.01 there’s actually no difference in risk between eating a steak with 135 internal vs 120 internal. Neither is hot enough to eliminate any potential bacteria in the steak. The important thing is a good sear, since the harmful bacteria is cooked off the outside of the steak where it lives
At first I thought that it looked a little too rare, then I remembered that it's recommended that you have wagyu be a little more rare than normal steak
It’s all a preference thing, however most chefs will actually tell you it should be cooked a little longer than a normal steak due to high fat content. While wagyu fat does melt at a lower temperature, I still wouldn’t want to be chewing on a lukewarm piece of fat.
Wagyu is blue rare (cooked on outside and fully raw on inside) and that’s how it’s supposed to be cooked to keep all of the juices from the rich and flavourful fat

Toasters are fine but I don’t want to shove my hand into a pot full of pasta to grab a scoop and shove it in my mouth.
A small tip is for wagyu you should probably add more seasoning to really bring out the flavours and also if you have butter and thyme, you should baste it, it adds a huge difference
not raw unless the outside isn’t cooked. That is rare and the reasons she made it rare are 1: because wagyu steaks are very fatty and by cooking it like a normal steak your loosing the juice that makes it wagyu. 2: because it is from a farm where cows are treated and feed well you are less likely to get a disease from cooking it less. Also another reason, connected to the last one, almost all of every streaks bacteria is on the outside, so that’s why you can have pink steaks.
@@anthonyz.72That's simply wrong. Fat is tender and juicy if it's cooked, a barely cooked inside fat is by no means more juice and tender than a slightly more cooked one. In fact the main cut of meat that shouldn't go past rare is the fillet for exactly the reason that it has no fat and if it goes to medium it will suck. Wagyu having to be eaten rare is objectively wrong and stems from the narrative that the more expensive the meat the less it should be cooked and that such a good steak shouldn't be cooked much.
