The white pepper was a very rare ingredient before the 1950s that Sanders had used that no one seems to be using much by other fried chicken recipes in the 1940s&50s.

The recipe I have includes 2Tbsps of white pepper as well. The trick is in how you cook it. You deep fry under pressure which gets all the flavors into the meat and keeps the skin softer. Sometimes you can buy a used chicken pressure fryer from a restaurant supply place. I think it would be a great investment for you since you really like KFC! Thanks for sharing!!
I grew up on salt and pepper on the chicken. It was actually a staple in my grandmother home. I know we can add other seasoning, but salt and pepper will give you some good tasting fried chicken. 😊

Hey Quang, maybe to elevate this even further, you should try to pressure cook it with this recipe and maybe add msg for the flavor to be more enhanced! Maybe then it’ll be the exact taste of kfc with the texture
S&P chicken is a wonderful flavor and a great canvas for other flavors (edit:spelling). I also grew up on S&P chicken. You can toss aromatics like lemon peel and rosemary into the oil to kick it up. You can also sprinkle the chicken with herbed or spiced salt you mixed yourself at the after frying and a squirt of citrus. You want exotic? Put lemon peel, lime peel, green onion, shallot, lemongrass, culantro and garlic clove in the oil while frying. Maybe even kaffir lime leaf. Serve with fried veggies on top and on the side put a quick pickled onion, cucumber and lemon/lime chunk dipping sauce with chopped culantro in it. Suggestion for Quang.
Holy shit, this is actually legit! The only difference with mine was I left it overnight in the fridge to dry brine after adding the salt and pepper. But it does taste almost EXACTLY like KFC.

This makes perfect sense because there’s actually four different types of pepper in the original recipe ground black pepper, ground white pepper, cracked black pepper, and crushed black pepper. Main ingredient salt then your guess is good as mine onion powder, garlic powder, savoury mustard powder. There is definitely no paprika in KFC. It comes out to red and doesn’t look anything like the original when you add paprika.

i did the exact same thing. do we wait after coating it w flour? or do we directly start frying it. i had small pieces of chicken. no where did it look like yours and it didnt taste like kfc. it tasted a bit salty coz i put a bit too much of it. it wasnt that crunchy and the colour was dark. how can i achieve it like yours? edit- i used skinless chicken pieces

I'll try this! But, KFC is pressure fried which gives it a particular texture. Mass produced with those industrial pressure fryers. So, it's ultimately impossible to duplicate it without that equipment. But, salt & pepper fried chicken is great! Popeye's, Church's, Roy Rogers, etc. that use deep fryers are easier to clone at home.
Pressure cooker it's not specially about texture. It was invented to KFC because with pressure cooker you can cut frying time from 15-16 minutes to 9-10minutes. They find a way to do it quicker because there was too many orders for that long frying. Of course taste from pressure cooker is slightly different but again - it was all about time.

It may taste like 'modern' kfc, which is a shadow of what it used to be and literally does taste like only salt and pepper, but if you want to know what KFC used to taste like, order yourself a bag of Grace's Perfect Blend. They sell a pre-mixed flour with the original herbs and spices. Colonel Sanders partnered with the Pat Grace back in the late 70's. After the Colonel died, Pat continued using the original recipe and his son sells the blend to this day. I had some shipped to Canada and it is the KFC I remember from our Canadian KFC's when I was a kid, before the colonel died. You do need white pepper as well. My process when using Grace's Blend is to brine my chicken for 24 hours in salt water, make a nice thick mixture of an egg and some milk...not too runny...add some salt and black pepper to the egg/milk as well...make sure the chicken is dry and then dunk it in the egg mixture. Coat thoroughly in the Grace's blend. Let sit for 5 minutes to adhere to the chicken and then fry. You can deep fry, pan fry...whatever....it will come out delicious and with so much more flavour than modern KFC. The american supplier is sapidumfoods
Marion Kay Chicken Seasoning 99-X. this is who made Kfc's original recipe back in the day when Colonel Sanders was still around, before corporate Penny Pinchers made them change the recipe to what it is today. 99-X the name the company sells it under today and you can still buy it.

Use crushed unsweetened corn flakes instead of the seasoned flour or combine the two for the most amazing crunch ever! QUICK TIME 🎉
