Old Country - Pecos Baffle Mod/Tel Tru

After trials of figuring this pecos out with tuning plates , I decided i wanted to actually see if the gauges on the bbq even meant something. I have my ink bird set up to tell me what the grate temps are and to be honest it helps when you have tuning plates and all the heat radiates from the bottom. But i want the traditional over the top smoke and not have to worry about burning my food from below , not to say the plates dont work but they definitely have their time when to be used especially when you need more even surface area to cook.In this video we remove that baffle and do a trial of smoke to see where the grate temps are , using the ink bird and we also install two other tel tru gauges .

Pulled pork is on my list , i plan on making a future video with 6 slabs of dinos just waiting for that occasion. Im guessing that fill up 3/4 of that grate. Remember i have the tuning plates for even cooking but heat from bottom
