This I can get into...I was going to dehydrate cheese but I think I will prefer this. Dry or powder may have its few uses but nothing like the real deal as is. Thank you so very much for sharing your expertise.
Just took delivery of two Ikg slabs of cheese wax...one red, the other yellow, which I'll use on Red Leicester. Glad I watched this vid or I'd have not known about dipping the cheese in vinegar first. Much obliged and thanks for posting!
Great cheese waxing demo, thank you for sharing. When you use up the cheeses, would it make sense to keep the used wax and reuse it for the next batch or is that asking for moldy trouble?
Thanks a mil! Well the wax could be reused but it's difficult to clean and keep without it going moldy until your next cheese waxing session, so i don't bother. However i would if i had to.
great video, do you have a link to get the wax ? i like to smoke cheese..but would love to give them to friends in wax !! it would be great as the longer it sits the better it gets
Thanks! Good idea smoking cheese. We didn't get that far yet, too many projects :D Here's the link: serowar.eu/en_GB/searchquery/wax/1/phot/5?url=wax Postage is 30 bucks to ireland, so we just go halves with somebody.
Is it that the “slimmer” the block of cheese the better probability of a long term storage? Or is it back to what you mentioned about leaving it to dry for two to three days before waxing?
The size of the block doesn't really matter, but generally the bigger the better for long term storage, but then you have to eat it all once you cut it open.
I wonder if a small deep fryer or crock pot would be good for getting that wax at right temp and keep it there for the time you need. I'm hoping the deep fryer basket with make a great dipper....has anyone tried this?
This is Tuesday, march 26… You didn’t go into too much detail about drying the cheese before dipping it do you just cut it and set it on the counter for a couple of days how does that work?
I just found your channel. I live in Union Gap Washington state USA! Does the cheese have a wax taste when you eat it? I can't wait to try this. Also does it matter what color cheese wax you use
The wax is not edible and it doesn't leave a flavour on the cheese. It's basically an airtight bag. Color doesn't make a difference, it's handy for different types of cheese.
Will dipping in vinegar change the flavor of the cheese after i smoke it? I see where you answered the vinegar question below but fid t know if it was different after i smoke it.
Another video i watched from someone else that was waxing cheese melted the cheese in a double boiler. I also believe they keep the wax melting part of the double boiler was just that … set aside for this repeated task.
Do you really have to turn the cheese every 2 weeks? That is too hard to remember, especially when the cheese is stored in a basement. Will it go bad if it is not turned?
Personally i don't bother turning it any more, well every few months when i inspect them for mold. By the way this is only on the surface and can be wiped away with a tissue and some vinegar.
Very unusual for the wax to get moldy, because it's not food. I would not use it. It's not worth risking it. When storing wax it's probably best to wrap it in clingfilm.
Absolutely no need to refrigerate it after waxing. That's the whole point of the wax and this is how cheese was kept before electricity and fridges for that matter ever existed. :D
@@GardensforLifePer your earlier comment about the 80% humidity that in locations like where we live in Texas, USA - gardening zone 8 with lower humidity that I’d not certain about it working here. Maybe I would put in fridge because of temperature and humidity of the house; or getting some type of cheese storage area that is temp/humidity controlled … kinda like cigars and such (😅).
@@GardensforLifeI wonder if you wiped the moldy pieces with the vinegar if that would get rid of the mold and keep it from getting more mold later. Can’t hurt to try a few pieces to see what happens.

This is a wonderful tutorial, Thank You! One question, once my homemade chaddar is waxed, cool dry place or refrigerator for long term storage?
the last batch i did, i put in the freezer for 15 min to get it a little hard, it was easier to handle

Sorry for the late reply. You could use a fryer and then turn it off once the wax is melted, but the dipper won't work.

This is Tuesday, march 26…
You didn’t go into too much detail about drying the cheese before dipping it do you just cut it and set it on the counter for a couple of days how does that work?
It needs to be hard cheese. Just dry it at room temperature on a kitchen towel for 24 hours and turn it halfway through.
I just found your channel. I live in Union Gap Washington state USA! Does the cheese have a wax taste when you eat it? I can't wait to try this. Also does it matter what color cheese wax you use

Does the vinegar leave a vinegar tinge in the cheese at all??
No taste of vinegar at all
Will dipping in vinegar change the flavor of the cheese after i smoke it? I see where you answered the vinegar question below but fid t know if it was different after i smoke it.
The vinegar doesn't change the flavour at all, before or after storage / smoking it.
how do you remove the left over wax from your pot. I ordered and am gonna try soon
We do not! The pots is now a dedicated waxing pot. :D

Is Humidity critical for storage?
I don't know to be honest, but our pantry is quite humid at 80+%. I imagine too dry would be a problem.
i have lots of waxed cheese in the fridge, if i see a crack can i re wax?
Yes you can, just not if it's already moldy in the crack. You don't need to keep it in the fridge after waxing! Just keep it rodent proof
Can I wax a cheese like mozzarella or queso fresco? And does the cheese taste like vinegar when we go to use it?
It only works with hard cheeses. There is no taste of the vinegar at all, it just kills bacteria and mold spores.
@@GardensforLife There are the big blocks of low moisture mozzarella so that should be fine right??
I have a hard cheese with a rind made of expresso grounds, will this hold up to the waxing process or should I remove it first?
I would remove the rind before waxing
I went to get my wax out to do my cheese, and it had black mold on, will the heat kill it, or should I bin it plz

No, only hard cheese
How to make raw wax at home
I don't know, we buy the cheese wax online.
It would have to be food grade, I imagine, especially concerning the colouring.
You can use bees wax, however, it's a bit pricey.
How much cost for wax your size ?

I have collected it in a jar before, but it goes moldy unless you can find a way to clean it very well.
