the pastry paddle is for when you are initially cutting butter into flour - and you want that crumbly mixture - you can go rough crumbles or the longer you use it, the finer the mixture will be. Make sure your butter is super cold. You will have fun with that machine. That's a great machine - I would love to have one.

But there is something else I'm looking at with lust. Trying to decide if I should just push that button, lol. Re the paddle, I worked in a pastry shop way back and that's what we used that paddle for. It did a nice job, We would actually freeze the butter before we added it to the flour. It made a big difference. There's a video by Erin something or other on the Food52 channel that explains nicely the difference in how fine you want the crumble when making pastry if you and/or Amy are interested in doing that sort of stuff.

how does this compare to the N50? i had an N50 but the motor would stop on any heavy doughs, unlike a kitchenaid which would just slow down. also do you still have the contact for the company that still has some in stock?
Looks like a SuperKitchenAid, which is a good thing. I love the way it does everything the Pro way vs. KA way. Shame Hobart didn't proceed with the product but it's good to see they engineered it as well as everything else they make. It's going to last for decades. Super find Any and a great deal too!

They appear to be, except for the whip. That appears to have iron as it rusts. Regarding KA, I think only the commercial 8 has stainless steel because it's NSF. Otherwise, coated is as good as you'll get with them.
Eric Learns to Cook i have my mom’s old KA ultra power mixer and it came with a stainless steel whisk attachment. It’s SO nice being able to put it in the dishwasher. I wash they’d make them that way again, I’d gladly pay extra for it 😭

Hello, am I late to the party? Is it still possible to buy one of these?. I just came across this video and I am experience serious fomo. I love to bake an would love to use something like this. My story is, that I use to work in restraunts when i wss a teen. When I was just a couple years out at a high school I went through a pastry/ baking program at The Vocational School nearby, although I didn't end up choosing culinary as a career, I still love to bake alot. Past few years I've been seriously searching for an affordable c100 mixer that I can use in my house with all my KitchenAid attachments, because by KitchenAid is too damn weak to do the breads that I want. I just today learned about the hl-6 that you display here. I don't have a lot of time to watch the video all the way through but I got about halfway and I have to go get some things done, and hopefully later tonight or tomorrow I'll be able to get back into this and figure out if this is something that I can still buy, I noticed it's over 2 years old, I have a feeling that probably they're all gone by now
Yeah they are all gone. You can find the Hobart N50 which is your best best to the HL6. They are really expensive like $4,500 but you can find used ones here and there. I found one for $250.
Thanks for getting back to me. I figured they'd be gone by now. It's too good to be true it sounded. All the one that I've seen for sale are well over $1,000, and used. I know about the n50. I used to use one in one of the restaurants that I worked at when I was younger. It's the bull size that I find limiting. I have a KitchenAid that's also a 5 quart capacity. I often need something larger in fact I don't use my KitchenAid mixer too often anymore because of that. I find myself often needing batters larger than 5 quarts and getting a huge bowl and using a hand mixer. For hearty breads I end up starting it with a mixer and then finishing it off and doing most of the needing by hand. My mother and I have been doing the Easter bread by hand. She's been doing it that way since I was a little kid. Always hoped that I would get the larger c100 for her so it wouldn't be so difficult. The past six or seven years we've been making half the size batches that we used to make. Even though I'm helping her a couple years ago I developed arthritis and a couple of my fingers. We giveaway a lot of batches to the family. Used to give it to a lot more friends, but now only to my brothers and sisters and they're been getting less and less because of the smaller batches. And because she cooks by memory we've never written down a recipe they're never exactly the same. She'll never make more than one batch at a time. That's why I would love to get a hold of an affordable c100 Hobart mixer. For the few times a year that we have to use it for making the holiday breads, and it would probably be using it more often to make breads in general if I did have it. I know my mom would love it. I'll be more likely to make party breads more often if I had that. Anyway it all comes down to price. Whenever I see something that's in my price range is usually too far away and doesn't offer shipping, or they do offer shipping which puts it out of my budget. It's funny, whenever I search online I often see a lot of the 20 quart or above, Hobart mixers that are $500 or less, better local to me but they're just Behemoth that would not be practical to own. And whenever I see a c100 local to me, it's usually in the 1000 and 1200 range or above. Anyway I'm sorry I rambled a lot on that, curse of being italian. LOL. Love their videos the four that I've watched so far, and look forward to see more of your stuff.

Hard to tell. They're both nice. Wolf is pretty and seems smooth enough. Hobart is just big, and is smooth enough. Probably will come down to which one dies first, if ever.
Well, for average bread loafs they are nice. I think due to the high duty cycle, you have to go easy on it (at least for bread). Once you get the 'heavy duty' mixers, you can toss concrete in it all day without a sweat. But for those breads the Artisan hates, this thing purrs through. Luckily, we're not a commercial bakery so we don't run it 20 hours a day. LOL.

There aren't any left. There was only a small run. A parts vendor got the remaining 50 or so and they sold all of them. The HL6 is now in the mixer history books lol.

Hi T-Photos! If you are trying to make a large amount, I would suggest more of a commercial mixer. You can find some options on Webstaurant.com. They also sell a 10 quart every once in a while on Sam's Club's website that is around the $600 price. The problem with large amounts is you need something with a lot of torque and most home machines are only designed for home type batch sizes.

Update: I ordered and received an HL6. That pastry knife is great for cutting butter into a flour mixture for when you are making a quick bread, such as a New England blueberry lemon bread. I am sure it will also work well when making a pie crust, or a biscuit recipe. This little mixer is very impressive for its light weight, and I believe it can be the perfect mixer for the home baker. If there's anything that deserves to be placed back into production, it's this one. The only reason Hobart didn't follow through, is that it would not have enough durability to survive for long in a commercial setting.

Hobart was the original builder of the Kitchen-aid stand mixer until they sold all the Kitchen-Aid line to Whirlpool! Don't they still make professional stand mixers for professional bakers etc?

It was just a prototype and only a small number were made. One of the parts manufacturers had the remainder of them but they sold the rest of them.

Time will tell. But it purrs really nicely when kneading bread, unlike some other mixers we know. LOL.

AMY CAN U HELP ME!!! I have been watching all your mixer video and I want to buy a mixer that is going to handle making large amount of pasta, bread, pizza dough. I can spend 500 to 900.00 what one do u think is going to be the strongest and make the best Doug. I had a bosh 600w didn't mix well and I have a kitchen aid I blow up lol so I wanted to go a little bigger can u please give me a suggestion.
Hi T-Photos! If you are trying to make a large amount, I would suggest more of a commercial mixer. You can find some options on Webstaurant.com. They also sell a 10 quart every once in a while on Sam's Club's website that is around the $600 price. The problem with large amounts is you need something with a lot of torque and most home machines are only designed for home type batch sizes.

Oh heck, we haven't fit a car in there for years. I got my snow blower blocking the entrance just 'hoping' we get some snow.

Update: I ordered and received an HL6. That pastry knife is great for cutting butter into a flour mixture for when you are making a quick bread, such as a New England blueberry lemon bread. I am sure it will also work well when making a pie crust, or a biscuit recipe. This little mixer is very impressive for its light weight, and I believe it can be the perfect mixer for the home baker. If there's anything that deserves to be placed back into production, it's this one. The only reason Hobart didn't follow through, is that it would not have enough durability to survive for long in a commercial setting.

Hobart was the original builder of the Kitchen-aid stand mixer until they sold all the Kitchen-Aid line to Whirlpool! Don't they still make professional stand mixers for professional bakers etc?
