    Okay what was the purpose of the zest orange then later add in some Lemon juice. Will that not erase one or the other flavor?

      Thank you for paying attention to these details. Let me explain: Lemon juice (citric acid) provides a little insurance against overworking the dough, inhibits gluten development, and prevents dough from oxidizing and browning. In addition, the lemon juice in the dough does not affect the taste in any way. Orange zest gives the dough a pleasant aroma. That's all. 😊
