This is one of the more modern and technically impressive ways to travel into mainland China. The other one is the HK-Zhuhai-Macao Bridge via bus or private car. More traditionally, you can take flights, ferries and trains. Hong Kong also has 4 land border crossings into Shenzhen, 2 of which are directly accessible by mass transit.
Had a chance to ask the border staff and they say the non-Chinese HKPR MTP can be used at mainland e-channels after having traveled to the mainland for 2+ times. A big convenience!
I also wish it were less expensive! Though in addition to the speed you would also get guaranteed (fairly nice) seating. First class on East Rail can be still more expensive and even then seats are not guaranteed.

What’s the last train that goes from HK to Shenzhen?
As of now it's around 11 pm, but do check the actual schedule when you plan to travel as it can change.
I assume left should work for Non-Chinese Citizen HK permanent residents who have the new Mainland Travel Permit (and have biometrics done)!

How much does it cost for one way train ticket from HK to Shenzhen ?
It's CNY 68 to Futian and 75 to Shenzhenbei, around USD 10 or so.
