Mostly for western they are vegetarian for healthy reasons meanwhile in asia mostly due to the belief system and ofcourse lots of health benefit of it. Ayurveda classifies foods based on their impact on the body and mind. Onion and garlic are considered rajasic, meaning they increase passion and restlessness. These foods are believed to disrupt the digestive system, which is considered the foundation of higher consciousness. To maintain mental clarity and spiritual balance, some Hindus choose to avoid onion and garlic. I hope you can get the point. Namaste

The Hungry Tapir was the best vegetarian meal we had in Malaysia. They also have a cafe down the street. Not sure if it's vegan friendly.

Vegan is no dairy at all, but they still eat onion or garlic,
Vegetarian not eat onion or garlic but still eat dairy like cheese, milk.
