Tip for the bacon press for bacon, use it for the first minute of cooking and then remove it. Once the bacon starts to cook and stop that initial shrink, you can pull the press off and not squeeze out as much juice!

Here in Perth NY we just got 24 hours of freezing rain followed by a foot of snow. I sorta made this today for lunch. Cheated by doing it on the stove (BS not easily accessible today). Also used rye with pumpernickel bread, Havarci and American Cheese, and hot links. Since we just had hot dogs the day before, I tried a variation of your grilled cheese hot dog sandwich by using 4 inch, thickly cut baloney and Texas toast using your techniques and wow! I don't normally use mayonnaise to toast bread, but you hit it on the head with this recipe! THANK YOU for the inspiration!!

@@waltwins My son would not eat hot dogs until he tried a Nathan's. Then he ate two of the Colossal 1/4 Pounders in one setting. Nothing on them. Plain & dry on a bun. Hebrew Nationals are a close second IMO but don't tell my wife I said that. She almost filed for divorce when I said such a dastardly thing. I am sure there are some local varieties that are fantastic but for a national brand, those two cannot be beat.
